In this paper,blueberry,black tea and green tea were used as raw materials,and different proportion of blueberry and black tea,blueberry and green tea were set.The weight ratio of blueberry to black tea was 3:1,2:1,1:1,1:2,and 3 duplicated;the weight ratio of blueberry to green tea was 4:1,3:1,2:1,1:2,and 3 duplicated.According to the sensory evaluation method of tea,combined with the characteristics of blueberry tea products and product design ideas,the sensory evaluation system of blueberry tea was established.The sensory evaluation was conducted from four aspects of appearance,aroma,taste and color,and the combined scores were evaluated according to the percentage.The contents of tea polyphenols,amino acids,caffeine and anthocyanins in different combinations were determined and their changes were analyzed.And The new tea products-Blueberry black tea and Blueberry green tea were obtained.The optimum formula of blueberry-green tea compound beverage was determined by comprehensive sensory evaluation and chemical composition analysis.The weight ratio of blueberry granule to green tea was 3:1.The content of tea polyphenol was 13.1%,the content of amino acid was 2.8%,the ratio of phenol to ammonia was 4.69,the content of caffeine was 1.03%,the content of anthocyanin was 2.92%.The sensory quality is fresh;the soup color is still bright;the blueberry aroma is clear and fresh and pleasant in the tea aroma;the taste is sour and sweet,the tea flavor and fruit flavor are mixed,fresh and refreshing.The optimum formula of blueberry-black tea compound beverage is that the weight ratio of blueberry granule to strip black tea is 1:1.The content of tea polyphenol,amino acid,phenol-ammonia ratio,caffeine and anthocyanin were 12%,2.33%,5.26,1.11% and 1.83%,respectively.The appearance of sensory quality is fresh;the tangerine orange is still bright;the aroma is slightly sour;the taste is sweet and sour.
