Jujube is a kind of plant in the genus lysiaceae,which has high nutritional and medicinal value and is known as the "king of vitamins".Xinjiang is the main production area of red jujube,as an important pillar of xinjiang's economic development.This study mainly focuses on the quality of jujube in the drying process of southern xinjiang at present.The identification of jujube drying quality mainly relies on subjective judgment,which cannot objectively reflect the quality of jujube.As a result,the economic benefits of jujube are relatively low,which indirectly brings huge economic losses to jujube farmers.This paper studies the relationship between quality parameters and dielectric characteristic parameters in the drying process of jujube under the detection method of dielectric characteristics,so as to provide theoretical support for the realization of non-destructive,rapid and online automatic detection of jujube in southern xinjiang.(1)According to the research status at home and abroad,the drying experiment of jujube was carried out under the drying conditions of vacuum degree(70Kpa)and drying temperature(55?,60?,65?).The dielectric parameters in the drying process of jujube were tested at the detection frequency of 1KHZ,10 KHZ,40KHZ and 100 KHZ.(2)the analysis in the drying process of jujube indicated that when the drying temperature was 60? and the detection frequency was 10 KHZ,the variation rule between the dielectric parameters and the quality of jujube during the drying process was the most obvious.Therefore,the correlation between the dielectric parameters and the drying quality of jujube under this condition was studied.(3)under the drying temperature of 60? and the detection frequency of 10 KHZ,the correlation between the dielectric characteristic parameters of jujube and its physical and mechanical quality indexes(hardness,elasticity,chewiness,adhesiveness)was studied,and the regression equation for predicting the physical quality of jujube was established.(4)under the drying temperature of 60? and detection frequency of 10 KHZ,the correlation between the dielectric characteristic parameters of jujube and its chemical quality index(water content,soluble sugar,vitamin C,titratable acid)was studied,and the regression equation for predicting the chemical quality of jujube was established.
