The changes of nutritional components during peanut germination as a research hotspot have already attracted much attention in recent years.It has been confirmed that electrolyzed water can induce seed germination to enrich functional nutrients.However,there were few studies on peanut germination induced by slightly acidic electrolyzed water,and the research of changes of nutrition,safety and allergenicity during germination.In this project,slightly acidic electrolyzed water(SAEW)was used as environmental stress,the effects of SAEW treatment with different available chlorine concentrations on peanut germination,total phenolics,antioxidant properties,and morphological characteristics during germination,microbial control and sensitization changes were studied to explore the impact of slightly acidic electrolyzed water on the peanut germination process..The main conclusions are as followed:1.The effect of different concentration of SAEW on functional substances and antioxidant capacity of peanut during germination.The results indicated that the treatment of SAEW20(28.18mg/L)has a significant positive effect on enrichment of phenolic substance and GABA.The antioxidant capacity of peanut sprout was higher by using lower concentration of SAEW(ACC 12.94 mg/L).The results of evaluation activities of peroxidase and glutamate decarboxylase showed that the treatment group with ACC of28.18 mg / L was the best.2.The effects of SAEW with different available chlorine concentrations,tap water and sodium hypochlorite solution on peanut germination rate,sprout length and bacteriostatic were studied.The results showed that the SAEW20(ACC 23.74 mg / L)treatment group had a maximum germination rate of 95.56% and a maximum sprout length of 19.06 mm compared to the TW and NaCl treatment groups.However,the higher concentration of SAEW had an inhibitory effect on peanut germination rate and sprout length.The results of microbial analysis during germination suggested that the SAEW30(ACC with 32.02 mg/L)treatment group had a significantly higher bactericidal inhibition effect,equivalent to the sodium hypochlorite solution inhibition effect,than other concentration treatment groups.3.The effects of different SAEWs,TW and NaCl solutions on peanut allergenicity were studied.The results showed that allergens contents and allergenicity were decreasedafter peanut germination treatment.The content of Ara h 1 was significantly reduced in two treatment groups,SAEW20(ACC with 25.52 mg/L)and SAEW30(ACC with 32.61mg/L).Ara h 2 content was significantly decreased in SAEW30(ACC with 32.61 mg/L)treatment group.4.The influence of SAEW treatment on protein types,classification and differential expression during peanut germination.The results indicated that protein content related to enzyme activity was higher in the SAEW treatment group,and the 12 different proteins that affect the enrichment of flavonoids are also related to the enzyme activity.
