In this paper,the chemical constituents of the extracts of Zanthoxylum bungeanum(Zanthoxylum bungeanum Maxim.)Extracted from Zanthoxylum bungeanum Maxim(UPLC-Q-TOF-MS)were analyzed and identified by ultra performance liquid chromatography-tandem quadrupole time-of-flight mass spectrometry(UPLC-Q-TOF-MS).Solvent extraction method and macroporous resin purification were used to study the flavonoids process of Zanthoxylum bungeanum residues.Four antioxidants in vitro tests were used to study the antioxidant activity of the extracted flavonoids in pepper and pepper residues.Exploring the antioxidant scavenging ability of the flavonoids of Zanthoxylum bungeanum residues obtained by the solvent extraction method.The main findings are as follows:1.The best conditions for extracting flavonoids from Zanthoxylum bungeanum with solvent method are:temperature is 25?,concentration of solvent(methanol)is 70%,material-liquid ratio is 1:8,extraction time is 5h.The yield is:7.65%.2.Comparing the adsorption rate and desorption rate of five kinds of macroporous adsorption resins,the study shows that the adsorption resin has the best purification effect of flavonoids in Zanthoxylum bungeanum residue D101.D101 The optimal conditions for the adsorption and desorption of the total flavonoids of Zanthoxylum bungeanum residue are:the pH of the sample solution is 4,the desorption solution is 70%methanol,and the desorption flow rate is 2BV/h.From 23.4%to 56.8%.3.Using UPLC-Q-TOF-MS technology combined with mass spectrometry database and related literature to quickly identify the chemical composition of industrially produced Zanthoxylum residue extract.A total of 8 compounds were identified,among which camellia flavone glycoside A,3 ',5,7-trihydroxy-4'-methoxyflavone 7 rutin,Lethedioside A and kaempferol-3-rut glycoside compounds Found for the first time in China.4.The total flavonoid DPPH free radical scavenging rate of the purified pepper residue is 89%,and the BHT and Vc scavenging rates of the same mass concentration are 50%and 93.1%,respectively.The reducing power of the total flavonoids of Zanthoxylum bungeanum residues is stronger than that of BHT and unpurified samples,and the reducing power of Vc is higher than that of the total flavonoids of Zanthoxylum bungeanum residues,which is about 1 times the same concentration.The purified samples of Zanthoxylum bungeanum flavonoids had higher inhibition rate of lipid peroxidation than BHT.The total antioxidant capacity of the purified total flavonoids of Zanthoxylum bungeanum residue was stronger than that of the purified total flavonoids of Zanthoxylum bungeanum,and weaker than that of Vc.
