Plasma activated water(Plasma activated water,PAW)is prepared by plasma discharge under the water,which contains a variety of active components and has good bacteriostatic function,so it has great application potential in the fields of biological tumor therapy,agricultural breeding and food cold sterilization.In this paper,taking Escherichia coli as the treated samples,the sterilization technology of PAW on Escherichia coli was studied,and the effect on thepreservation of cherry tomatos were discussed,so as to provide theoretical basis and new ideas for fresh fruit and vegetable products.The main research results are as follows:(1)Sterilization effect of PAW on Escherichia coliThe preparation technology of PAW on Escherichia coli was investigated under different treatment time.The sterilization effect of PAW prepared by air discharge was the best,followed by oxygen and nitrogen.The best process conditions were as follows:discharge gas of air,discharge power of 500 W,gas flow rate of 40 L/min.(2)Performance characterization of PAWOxidation-Reduction Potential(ORP)and conductivity of PAW gradually increased with treatmen durations,and the pH value decreased rapidly with the increase of discharge time,which was related to the content of hydroxyl radical,hydrogen peroxide,NO2-,and other active substances in water.The study on the timeliness of PAW showed that the PAW prepared by air plasma had higher ORP value and longer timeliness,which was consistent with the test results of pH and electrical conductivity.(3)Study on the application of PAW in the storage and preservation of cherry tomatoesThe quality of cherry tomatos washed by PAW was detected,indicating that PAW cleaning could reduce the weight loss rate without affecting the firmness,color,soluble solids content and pH quality characteristics.As it can be showed that,PAW has a wide application prospect in the field of food cold sterilization.
