Comparative Study On The Accumulation Of Phenols And Aroma Substances In Different Grape Varieties And Wines At The Eastern Foot Of Helan Mountain

In this study,15 grape varieties were selected as the research objects.The phenols and aroma components of grape fruit were detected by HPLC and GC-MS,and the differences of phenols and Aroma Components Accumulation in different grape varieties and wine under the environmental conditions of the eastern foot of Helan Mountain were studied by transcriptome sequencing.The results show that:1.The results showed that the sugar acid ratio of red Eurasian species was the highest,red Eurasian species was the second,white Eurasian species was the lowest;under the experimental conditions,the varieties with the highest total soluble sugar content of red Eurasian species,red Eurasian species and white Eurasian species were respectively 'Syrah','Beimei' and 'Marselan',and the varieties with the lowest titratable acid content were'Pinot Noir','Beixi' and 'Chardonnay'.2.The results showed that among the red Eurasian grape fruits,the content of total phenols and anthocyanins in 'Marselan' was the highest,the content of tannins in 'Pinot Noir' was the highest,and the content of phenolic acid,flavanol,flavonol and stilbene in Cabernet Sauvignon 'is the highest.Among the red grape fruits,the content of total phenols,tannins,anthocyanins and flavanols in'Beimei' is the highest,phenolic acids and flavonols in 'Beiquan' are the highest,and stilbenes in'xinbeichun' are the highest.In the grape fruits of white Eurasian species,the phenol content of 'Petit Manseng' is higher.According to the cluster analysis of phenols in different kinds of wine,red Eurasian species belong to 1 group(except 'Syrah'),red European mountain species belong to 1 group(except 'Beiquan'),and white Eurasian species belong to 1 group.3.The results showed that 51-72 aroma compounds were detected in red Eurasian grape,there are 47-74 species of red European mountain species and 34-68 species of white Eurasian species,among which 'Pinot Noir','xinbeichun'and 'Beixi' have more aroma types in grape fruits of the same species.There are 33-59 aroma compounds in red Eurasian wine,there are 43-65 species of red eucalyptus and 36-42 species of white Eurasian,among which 'Marselan','Xinbeichun' and‘Petit Manseng' have more aroma types in the same kind of wine.4.The results of differential gene expression analysis showed that the total number of down regulated genes was higher than that of up regulated genes in ripening stage.Four genes related to polyphenol accumulation(PAL,CHS,LDOX,MYBA)involved four metabolic pathways;three genes related to aroma(LOX,HPL,CCD1)involved two metabolic pathways;these same genes related to phenols and aroma accumulation were expressed differently in different varieties,namely,HPL of Syrah,PAL,CHS and LDOX of 'xinbeichun',LOX of 'Beichun',CCD1 of'Chardonnay'and the expression of MYBA gene in 'Petit Manseng' was significantly higher than that in other varieties(P<0.05).
