Seasoning as an indispensable part of diet has a very close relationship with cancer.Currently,there are many researches on cancer risk caused by analyzing the inhibitory effect of seasoning on human cells.However,it is well known that the original cancer cells exist in the human body and if the original cancer cells exceed a certain range in the human body,cancer will occur.Whether seasoning can increase cancer risk by promoting cancer cell proliferation deserves people's attention.Based on Hormesis effect,this paper studied the promoting effects of common solid,soy sauce and juice condiments and their main components on HepG2 cells,and explored the single and combined promoting effects of the main components in each condiment.Based on the above research results,the possible reasons for each condiment to promote the proliferation of HepG2 cells were analyzed.The main research results are as follows:(1)Study on the proliferation of HepG2 cells by solid condiments(white sugar,brown sugar,black sugar,monosodium glutamate and chicken essence)and its mechanism.The effects of 12 brands of white sugar,12 brands of brown sugar,7 brands of black sugar,10 brands of monosodium glutamate and 15 brands of chicken essence and their main components on the proliferation of HepG2 cells were determined.The results showed that 9 brands of brown sugar,2 brands of black sugar,2 brands of monosodium glutamate and 15 brands of chicken essence could promote the proliferation of HepG2 cells,with the cancer-promoting effect concentration range of brown sugar and black sugar roughly between 1E-5 g/m L and 3E-2 g/m L,and the concentration range of monosodium glutamate and chicken essence condiment promoting the proliferation of HepG2 cells basically between 1E-5 g/m L and 2e-3 g/m L.Glucose and fructose,the main components of brown sugar and black sugar,can promote the proliferation of HepG2 cells,while monosodium glutamate and disodium 5'-nucleotide,the main components of chicken essence,can promote the proliferation of HepG2 cells.Taking brown sugar 1 as the research object,the IA model was used to analyze the combined cancer-promoting effects of various main components in brown sugar 1 on HepG2 liver cancer cells.The combined cancer-promoting effect of the main components of brown sugar 1 is first additive and then synergistic.Based on the above research results,it is preliminarily analyzed that the reason why carbohydrate condiments promote HepG2 proliferation may be due to the glycolysis of grapes and fructose metabolism providing energy for cell proliferation,while the combined effect is shown as synergistic because glucose can promote fructokinase to catalyze glucose,while fructose-1-phosphate phosphorylated by fructose can promote glycolysis of grapes.The mechanism that monosodium glutamate and chicken essence condiment promote the proliferation of HepG2 cells may be that 5'-nucleotide disodium enters cells to inhibit c GMP synthesis and reduce the inhibitory effect of c GMP on cell proliferation,thus accelerating cell proliferation.(2)Study on the proliferation effect and mechanism of soy sauce condiments on HepG2 cells.The effects of nine brands of soy sauce and its main components on the proliferation of HepG2 cells were determined.The results showed that all nine brands of soy sauce could promote the proliferation of HepG2 cells,and the concentration range of cancer-promoting effect was approximately 2E-5 g/m L to 2E-2 g/m L.Glutamic acid and glucose are the main components in soy sauce condiments that can promote the proliferation of HepG2 cells.Soy sauce 2 was taken as the research object,and IA model was used to analyze the combined cancer-promoting effects of various major components in soy sauce 2 on HepG2 liver cancer cells.The combined cancer-promoting effect of soy sauce 2 main components is first additive and then synergistic.Based on the above research results,it is preliminarily analyzed that the reason why soy sauce condiments promote HepG2 proliferation may be that glucose glycolysis and amino acid metabolism provide energy for cell proliferation.The possible reason why soy sauce 2 main components combine with cancer promotion effect is that amino acid metabolism and grape glycolysis are closely linked.Amino acid can participate in glycolysis process and accelerate glycolysis.In addition,ammonia removal of amino acid generates ?-keto acid,which can generate glucose through gluconeogenesis and provide raw materials for glycolysis.(3)Study on the proliferation of HepG2 cells by juice condiments and mechanism.The effects of 11 brands of marinade bags and their main components on the proliferation of HepG2 cells were determined.The results showed that 9 brands of marinade could promote the proliferation of HepG2 cells,and the concentration range of cancer-promoting effect was approximately between 1E-5 g/m L and 1E-2 g/m L.Ferulic acid,cinnamaldehyde,shikimic acid,imperatorin and perillaldehyde are the main components in the marinade bag that can promote the proliferation of HepG2 cells.Taking marinated material package 1 as the research object,the IA model was used to analyze the combined cancer-promoting effect of various main components in marinated material package 1 on HepG2 liver cancer cells and to measure the effect of marinated material package 1 on HepG2 cell cycle.The results showed that the combined cancer-promoting effect of main components in marinated material package 1 was additive,and marinated material package 1 promoted the transition of HepG2 cell cycle from G1 to S phase.Based on the above research results,this paper preliminarily analyzes that the reason why juice condiments promote HepG2 proliferation may be the increase of intracellular ROS content caused by exposure of low concentration marinade.Low level ROS can activate ERK1/2 protein,up-regulate the relative expression of m RNA of Cyclin D1,promote cell transformation from G0/G1 phase to s phase,and stimulate cell proliferation.This study provides data support for scientific management and efficient monitoring of condiments.Through the research on the combined cancer-promoting effect of main ingredients of condiments on human cancer cells,a new idea is provided for the research on the cancer-promoting effect of mixed foods containing multiple ingredients on cancer cells.In addition,the possible mechanism of various condiments on the promotion of HepG2 liver cancer cells is analyzed,which provides a direction for the research on the cancer-promoting mechanism of condiments.
