| The mitten crab,Eriocheir,is an important economic crustacean in East Asia,mainly distributed in the coastal basins of China,Japan and South Korea,mainly including Eriocheir sinensis and Eriocheir japonica.Chinese mitten crab geographical populations,such as the Suifen River,the Tumen River,the Liao River,the Yellow River,the Yangtze River,the Oujiang River,and the Minjiang River populations are mainly distributed in coastal areas of China,and the Liaohe River,Yellow River and Yangtze River populations of Chinese mitten crabs have been large-scale artificial cultured,forming a huge Chinese mitten crab farming industry.So far,the evaluation of wild different geographical populations Chinese mitten crabs resources mainly focused on morphological and genetic diversity assessment,but no systematic studies on the nutritional quality comparison of wild Chinese mitten crabs in China coastal areas have been reported,which is not conducive to wild Chinese mitten crab resources scientific evaluation and utilization.In view of that,this study,which was implemented to compare firstly the edible yield,proximate composition,fatty acids and amino acids compositions and contents of major wild geographic populations Chinese mitten crabs(Liao River,Yellow River,Yangtze River,Oujiang River,and Minjiang River populations.The female Chinese mitten crabs weights were about 100 g,and the male Chinese mitten crabs weights were about 150g)from the coast areas of China,and then to research the color parameters and carotenoid compositions and contents in carapaces,hepatopancreas and ovaries of five geographical populations.The correlations with color parameters and carotenoid compositions were further explored to provide the basic data of evaluation of germplasm resources of wild Chinese mitten crab in the coast areas of China,and also to provide theoretical reference for the rational development and utilization of wild different geographic populations Chinese mitten crab resources.The main contents of this study are as follows:1 Comparative study on edible yield and nutritional compositions of main wild female Chinese mitten crab,Eriocheir sinensis,geographic populations from the coastal area of East China.There are five major wild geographical populations Chinese mitten crabs(Eriocheir sinensis)in coastal areas of China,such as Liaohe River,Yellow River,Yangtze River,Oujiang River and Minjiang River populations.This study was implemented to evaluate the meat yield(MY),hepatosomatic index(HSI),ovarian index(OI),total edible yield(TEY)and nutritional composition(proximate compositions,fatty acids and amino acids compositions and contents)in edible tissues of five geographic populations wild female Chinese mitten crabs.The result showed that:(1)the TEY of Yangtze River population Chinese mitten crab(44.14%)was significantly higher than that of Oujiang River population(41.67%)and Minjiang River population(41.72%)(P < 0.05).(2)There were no significant difference in ovaries crud protein and ash contents of five geographic population(P > 0.05),but the lipid content in the ovary of Yangtze River population was significantly higher than Liaohe River population(P < 0.05).Lipid and crude protein contents in muscle of Chinese mitten crabs from Yangtze River,Oujiang River and Minjiang River populations were significantly higher than that of Liaohe River and Yellow River populations of China(P < 0.05).There were significant differences in ash contents in muscle and hepatopancreas of five populations.The lipid content in hepatopancreas of Yangtze River population was significantly higher than that of Yellow River,Oujiang River and Minjiang River populations,and the crud protein content in hepatopancreas of Minjiang River population was significant difference in Liaohe River,Yellow River and Yangtze River populations(P < 0.05).(3)The total saturate fatty acids(∑SFA)in edible tissues of Yellow River population was highest.The total monounsaturated fatty acids(∑MUFA)in female Chinese mitten crab hepatopancreas of Oujiang River population was significantly higher than Liaohe River population(P < 0.05),however,the ∑MUFA in muscle and gonad of five populations had no significant difference(P > 0.05).The long chain polyunsaturated fatty acids(LC-PUFA),very long chain polyunsaturated fatty acids(VLC-PUFA),n-3 long chain polyunsaturated fatty acids(n-3LC-PUFA)and n-6 long chain polyunsaturated fatty acids(n-6LC-PUFA)in female Chinese mitten crab edible tissues of Liaohe River,Yellow River and Yangtze River populations were higher than others.(4)The levels of total essential amino acid(∑EAA),total amino acid(TAA)and essential amino acid scores(EAAS)in muscle of Minjiang River population were highest.The gonad of Yangtze River population was shown to the highest levels of EAA,TAA and EAAS.In conclusion,differences can be seen in edible yield and proximate compositions of main coastal geographic populations female Chinese mitten crabs.The total edible yield and nutritional values in edible tissues of female Yangtze River population were higher than other populations.The n-3LC-PUFA content in edible tissues of Liaohe River population is highest,and the amino acids nutritional value in muscle of Minjiang River population is relatively higher.2 Comparative study on edible yield and nutritional compositions of main wild male Chinese mitten crab,Eriocheir sinensis,geographic populations from the coastal area of East China.There are five major geographical populations in the coastal areas of China,such as Liaohe River,Yellow River,Yangtze River,Oujiang River and Minjiang River,and the comparison and evaluation of their nutritional quality contributes to the development and utilization of population resources.This study determined the edible yield,the proximate compositions,fatty acids and amino acids of various edible tissues and evaluated their nutritional value of males in the main geographical population of China coastal population.The results showed that(1)the total edible yield(TEY)of the Oujiang River population was the lowest,and the TEY of the Yangtze River population was the highest,and the TEY of the two populations was significantly different(P < 0.05).(2)The hepatopancreas was rich in lipids,and the protein content in muscles and gonads was rich.The total lipid content in the hepatopancreas of the Yangtze River population was significantly higher than those of the Liaohe River,Oujiang River and Minjiang River populations(P < 0.05).The crude protein content in the gonads was significantly higher than that of the Yellow River,Oujiang River and Minjiang River populations(P < 0.05).The crude protein content in the male muscles of the Minjiang River population was significantly higher than that in the Liaohe River,Yellow River and Oujiang River populations(P < 0.05).(3)The content of C22:6n3(DHA)in male hepatopancreas of Yangtze River population was significantly higher than that of other four geographical populations,and the very long chain polyunsaturated fatty acid content(VLC-PUFA)was significantly higher than that of Liaohe River,Yellow River and Minjiang River populations(P < 0.05).The DHA content in the male muscles of the Yangtze River population was significantly higher than that of the Liaohe River,Yellow River and Minjiang River(P < 0.05).The muscles of the Oujiang and Minjiang Rivers’ populations contained higher VLC-PUFA(P < 0.05).The gonads of Minjiang River population contained higher levels of C20:4n6(ARA)and VLC-PUFA(P < 0.05).There were high contents of saturated fatty acids(SFA)and monounsaturated fatty acids(MUFA)in the hepatopancreas,and there were high long chain polyunsaturated fatty acids in muscle and gonads.(4)The total essential amino acids(∑EAA),total non-essential amino acids(∑NEAA)and total amino acid(TAA)in the male muscles of the Yangtze River and Minjiang River populations were significantly higher than those in the Liaohe River population(P < 0.05).The∑ EAA in the gonads of the Yangtze River population was significantly higher than that of the Yellow River,Oujiang River and Minjiang River(P < 0.05).The lysine and tryptophan in the male gonads of the five populations were restricted amino acids,and there were no limiting amino acids in the muscle.Oujiang River population Chinese mitten crabs had the most restricted amino acids.In conclusion,the nutritional compositions in the edible tissues of different geographical populations were different.The nutrient compositions of the Yangtze River population male Chinese mitten crabs were better than another population.The nutrient compositions of different edible parts were also different among five populations.The nutritional value of unsaturated fatty acids in muscles and gonads were higher than that in hepatopancreas,and the nutritional value of amino acids in muscle was higher than that of gonads.3 Study on comparison of color parameters,carotenoids compositions and the correlation between them of main wild Chinese mitten crabs,Eriocheir sinensis,populations from the coastal areas of China.Color parameters and carotenoids contents are important economic evaluated indexes for crustaceans.So far,no studies on the color parameters and carotenoids contents of wild different populations Chinese mitten crabs in China coastal areas have been reported,which is not conducive to wild Chinese mitten crab resources scientific evaluation and utilization.In this study,the color parameters and carotenoid composition contents of wild Chinese mitten crab carapaces,gonads,and hepatopancreas in five major geographic populations along the coast of China were measured.The results showed that:(1)No matter female or male,L*,a* and b* parameters of carapaces,ovaries and hepatopancreas of different geographic populations were significantly different(P <0.05).The interaction between geographic populations and sex of Chinese mitten crab significantly affected the L*,a* and b* parameters of hepatopancreas,but only b* values of carapaces were significantly affected by the interaction of gender and geographic groups(P <0.05).(2)The composition of carotenoids contained in different tissues of Chinese mitten crab were different.The carapaces and hepatopancreas mainly contained astaxanthin and β-carotene,respectively,and their contents were affected by both geographical populations and gender.There are many kinds of carotenoids in the ovaries,and their contents were significantly affected by geographical populations.(P <0.05).(3)For the correlation of color parameters and carotenoids contents,there was no significant correlation between the color parameters and carotenoid contents of carapace(P > 0.05).The L* parameter in the ovary was significantly negatively correlated with total carotenoids,astaxanthin,lutein and canthaxanthin contents,the a* parameter in the ovary was significantly positively correlated with astaxanthin and canthaxanthin contents,and the b* parameter in the ovary was significantly negatively correlated with astaxanthin and canthaxanthin contents(P <0.05).The L* parameter of hepatopancreas was significantly negatively correlated with total carotenoids and β-carotene contents,and the a* and b* parameters were significantly positively correlated with total carotenoid and β-carotene contents,respectively(P <0.05).In summary,there were significant differences in the color parameters and carotenoid contents in carapaces,ovaries and hepatopancreas of different geographic populations Chinese mitten crabs,and the gender had an impact on their color parameters and carotenoid contents.There was significant correlation between carotenoid contents and color parameters in the ovaries and hepatopancreas. |
