Eriocheir sinensis is an important freshwater crab species in China,also named as river crab or hairy crab.The Eriocheir sinensis is adaptable and widespread.The Eriocheir sinensis culture of China is mainly concentrated in the waters of the Yangtze River,Yellow River and Liaohe River.Among them,the Yangtze River water has the largest output,and the Eriocheir sinensis from Gucheng Lake and Yangcheng Lake are the most highly acclaimed.In recent years,the continuous expansion of Eriocheir sinensis consumer market has promoted the development of its aquaculture,trade and processing industries.In addition the output has also increased.In 2017,the national aquaculture production has reached 750 945 t.The Eriocheir sinensis is nutritious,tasty,fresh and tender.It is deeply loved by consumers.However,the price of Eriocheir sinensis from different waters on the market is quite different.Therefore,the public pays more and more attention to the differences in the characteristic nutrient composition of aquatic products from different producing areas and the origin identification of regional specialty products.Under the same safety and health conditions,the choice of high-quality aquatic products has become a consumer concept and consumer culture.The classification of aquatic products has become practical.The research on the content of nutrients in Eriocheir sinensis is mainly concentrated on conventional nutrients such as amino acids,fatty acids,water,ash,protein,fat,etc.The methods of measurement mostly take national standard or trade standard.There are few studies on the differences in nutrient composition of Eriocheir sinensis from different habitats,and the range of comparison should be more comprehensive.In this paper,the determination method of cholesterol content in Eriocheir sinensis was improved,and the nutrient and flavor components of different edible parts in Eriocheir sinensis from Liaohe River,Yellow River,Gucheng Lake and Yangcheng Lake were systematically analyzed.The results can provide basic information for the evaluation of Eriocheir sinensis resources,excavation of excellent traits and improvement of breeding.At the same time,it also provides consumers with the comprehensive imformation of nutritional quality and the scientific guidance for their consumption.1.An determination method of cholesterol in Eriocheir sinensis by ultra-high performance liquid chromatography was established,which simplified the process of sample preparation and worked out the optimal chromatographic conditions.The results showed that the average value of the coefficient R~2 was 0.9999,with good linearity.The limit of detection(LOD)was 0.9μg/mL and the limit of quantitation(LOQ)was 2.0μg/mL,which could meet the demand of detection and analysis of cholesterol in Eriocheir sinensis.The method was applied to the determination of cholesterol content in Eriocheir sinensis from Liaohe River,Yellow River,Gucheng Lake and Yangcheng Lake.The results showed that cholesterol in Eriocheir sinensis was mainly found in crab paste.The cholesterol content in Eriocheir sinensis from Gucheng Lake and Yangcheng Lake was significantly higher than that from Yellow River and Liaohe River(p<0.05).2.The Eriocheir sinensis from different waters were collected to determine the main nutrients such as moisture,ash,crude protein,crude fat and mineral elements in edible part.The results showed that the calcium content in the females from Liaohe River and Yellow River was significantly higher than that from Gucheng Lake and Yangcheng Lake.The iron content of the females from Yangcheng Lake was significantly higher than that of the other three waters;The content of iron in the crab paste of male crabs from Liaohe River was significantly higher than that from other three waters,which was 284.3 mg/100 g.The content of zinc in the edible part of the male squirrel from Gucheng Lake was significantly higher than that from other three waters,which was 63.5 mg/100 g.The content of nutrients in edible parts of Eriocheir sinensis from different waters is different,which may be related to its genetic and environmental factors.3.The content of fatty acid,amino acid and nucleotide in the edible parts of Eriocheir sinensis from different waters and genders were determined and compared.The results showed that the DHA content in the female crab cream of the Eriocheir sinensis from Gucheng Lake was significantly higher than that from other waters,and the polyunsaturated fatty acid content in the edible part of the male crabs from Gucheng Lake was significantly higher than that from other three waters;The amino acid content(smell amino acid,essential amino acid and total amino acid)of Eriocheir sinensis from Gucheng Lake and Yangcheng Lake was significantly higher than that from Yellow River and Liaohe Rivers.In addition,the inosine content in crab cream of Eriocheir sinensis from Liaohe River was more abundant.There are some differences in the flavor composition of the Eriocheir sinensis edible parts from different waters.This study can provide data support for the constitution of quality standards and quality identification indicators of Eriocheir sinensis. |
