Fresh meat quality testing is the focus of attention in the food industry.In order to quickly determine the quality of fresh meat,the spectral non-destructive testing is introduced.However,in the sales process,fresh meat is circulated in form of packaging,and the interference of the packaging film has become a problem to be solved in the quality inspection of fresh meat.This subject takes packaged fresh meat as the research object.The traditional and multispectral detection methods are used to determine the quality of packaged fresh meat.Mathematical methods are used to process the spectral data to build a quality model and verify.And a method of interference correction for packaging film is proposed to realize the detection of packaged fresh meat.The contents of the study are as follows:(1)Multispectral non-destructive testing measures the quality indicators of fresh meat.Four quality indicators of fresh meat were measured and spectral data were collected.The correction effects of nine pretreatment methods on spectral data were studied,and four quality index evaluation models were constructed and verified.The results showed that partial least squares regression was not suitable for myoglobin indicators.Therefore,a quantitative analysis method of myoglobin was proposed to construct a correlation coefficient of myoglobin quality model R?0.9536.Among the three models of fresh beef and two models of fresh pork,SNV + DT pretreatment modified the best.The standardized pretreatment correction effect was the best in the fresh pork pH model.Correlation coefficients of pH,TVB-N and total bacterial count of fresh beef and pork were 0.9769,0.9023,0.9877,0.9808,0.9522 and 0.9617,respectively.(2)Study on interference and correction methods of packaging film on fresh meat spectrum detection.The spectra were collected,the influence of packaging film on detection was analyzed,and the interference elimination method of packaging film was proposed and verified.The results showed that the correction method was feasible,and the average relative errors of fresh beef and pork models were ?2.7738% and 3.2043%,respectively.(3)Study on the non-destructive detection of packaged fresh meat.Considered the influence of packaging film,four quality models were constructed.The results showed that the average relative errors of myoglobin were ?2.0158% and 2.0053%.pH,TVB-N and total bacterial count were 2.0462%,1.4004%,1.0408%,1.0515%,1.0772% and 1.0566%,respectively.(4)Design non-destructive detection system for packaged fresh meat.The system contained 3 parts that can realize the detection of the fresh meat of unknown quality.
