“ Food ” is essential to everybody.For many people,traditional food is just a product to fill their stomachs.Therefore,at the beginning of the period,people's focus on traditional food is the taste of the food itself.On this basis,the folk traditional snack operators put the core of business philosophy on how to maintain the most primitive form and taste of traditional snacks.With the promotion of local cultural tourism,more and more foreign elements are pouring into the traditional culture system,which also includes the impact on traditional food.This article uses narrative techniques to show the adaptive behavior of folk traditional snack operators.Taking Pushi Town as an example,local traditional snacks and their operators,as integral parts of the local culture,tried to combine their own products with local tourism activities under the encouragement of the local government.In this process,as alien groups of diners,the tourists have their own taste preferences and curiosities about food preparation in addition to taking leisure and entertainment here.These are affecting the original business philosophy and managing mode of the traditional snack operators.Therefore,it is of greatsignificance for the future development of the traditional food industry to understand how these folk traditional snack operators react to these change and display their inherent experience of the world.In this paper,three types of operators are taken as the objects of observation with the participation observation method in field work.First of all,the author describes the diversified folk traditional snacks in the prosperous period of Pushi Town by reading literature and collecting local materials.And she analyzes why local people regard glutinous rice cake with "sticky" taste as one of the most representative snacks in Pushi Town today.Secondly,through of the way of writing,the author describes the production and exchange practice of different snack operators in daily life by means of in-depth description,so as to show the diversified operation modes adopted by different types of operators.Finally,the author explains the local knowledge and principles used by these snack operators in practice,and finds that under the influence of modernization and tourism,these operators take the initiative to adjust their local knowledge system to the changes of local economy.For some operators,they still adhere to the original business philosophy and modes,and their adaptation process may be a little bit delayed.However,through the demonstration of their life and production,we can explore the possibility and opportunity of their development in the modern economic trend.
