In this thesis,cinnamaldehyde is used as the core material and calcium carbonate is used as the wall material to prepare closed cinnamaldehyde microcapsules.Single factor experiment and orthogonal experiment were carried out to optimize the preparation process of cinnamaldehyde microcapsules.The effects of emulsifier,core-to-wall ratio,preparation temperature,and stirring speed on the formation of microcapsules were specifically studied.The optimal preparation conditions were determined: sodium dodecyl sulfate as emulsifier,emulsifier concentration 5%,emulsification temperature 60?,emulsification time 1h,stirring rate during emulsification 1000r/min,emulsifier concentration 10%,the core-wall ratio is 1:1.5,the concentration of sodium carbonate is 10%,the dropping rate cannot exceed 2m L/min,and the stirring rate when forming microcapsules is 300r/min.Under such conditions,the yield and efficiency of microcapsules reached 82.85% and 81.35% respectively,the embedding rate was 40.12%,the loss of core material was 2.5%,and the water content was 3.7%.The morphology of the microcapsules was characterized by transmission electron microscopy,showing that spherical-like microcapsules with good airtightness were obtained.
