Taraxacum mongolicum Hand.-Mazz.is a Chinese herbal medicine for both medicine and food.It is rich in biological active ingredients,has high nutritional value,and is widely distributed and rich in germplasm resources.Dandelion flavonoids,polyphenols and polysaccharides have anti-oxidation,anti-aging,anti-tumor,improve immunity,broad-spectrum antibacterial and other health effects,and are high-quality and safe functional additives in medicine and food.In this paper,the Taraxacum mongolicum was used as the main raw material.Firstly,the simultaneous extraction process of flavonoids,polyphenols and polysaccharides from dandelion active ingredients was studied.The optimal process parameters were determined by single factor and response surface experiments.Then they were combined with chrysanthemum juice.The research on its process formula was carried out.At the same time,the formulation of dandelion oral tablets was studied to provide a basis for the development and application of dandelion,and to provide theoretical guidance for actual production.The main results are as follows:1.The optimal process parameters were determined by single factor and response surface experiments: ethanol volume fraction 60%,solid-liquid ratio 1:40 g/mL,extraction time 40 min,ultrasonic temperature 65 °C,dandelion target product extraction rate 21.95%.In addition,the extraction rate of flavonoids in the target product was 5.62%,the extraction rate of polyphenols was 3.44%,and the polysaccharide extraction rate was 12.89%.Through the optimization of the simultaneous extraction process,the total extraction rate of flavonoids,polyphenols and polysaccharides is relatively high,which has certain reference value.2.The optimal formula of the composite beverage is: dandelion juice 80%,chrysanthemum juice 20%,white sugar 4%,citric acid 0.02%,honey 2%.The color of the composite beverage is light yellow,uniform in structure,clear and transparent,sweet and sour.The aroma has the scent of dandelion and chrysanthemum and has no odor.The physicochemical indexes of dandelion chrysanthemum composite beverage products were analyzed,and the soluble solids were 9.30%,the pH was 4.82,the total acid was 0.10%,the total sugar was 12.83%,protein,total flavonoids and chlorogenic acid were 0.08 mg/mL,0.69 mg/mL,0.35 mg/mL,respectively.The product quality indicators are in line with current national standards.3.The best formula of dandelion lozenge is: dandelion extraction 21.74%,dextrin 43.47%,starch slurry 17.39%,sucrose 17.39%,citric acid 0.87%,magnesium stearate 0.65%.Then the quality of the dandelion tablets was evaluated.The average hardness was 34 N,the average tablet weight was 0.5521 g,and the difference in tablet weight was within 5%.The morphology was complete,the surface was smooth,the tissue was fine,and there was no broken lobes.It is easy to split,has a sweet and sour taste,is pure in taste,has no powdery feeling,and has the original color of dandelion extract and uniform color.
