With the development of economy and society,people's living standards have been constantly improved and improved.Food safety has become an increasingly concerned problem.It not only concerns the vital interests of consumers,but also affects people's health and social stability.General Secretary Xi also proposed to ensure the safety of the people's tongue.Food detection is an important measure to ensure food safety.In order to meet the market demand,it is urgent to develop a fast and effective food safety detection method.Surface enhanced Raman spectroscopy(SERS)has the advantages of simple operation,fast analysis speed and high sensitivity.Therefore,it has been widely used in the detection of food,environment,biological medicine and other fields,and has achieved good results.In this paper,surface enhanced Raman spectroscopy(SERS)was used to detect the illegally added saccharin sodium in alcohol production,in order to provide the basis for the efficient and accurate screening and detection of saccharin sodium illegally added in liquor.This paper mainly includes the following three aspects:1.A new type of core-shell type was prepared Au@Ag Based on the new prepared nanoparticles combined with surface enhanced Raman spectroscopy(SERS),saccharin sodium in wine was detected.A general pretreatment method has been found for the detection of saccharin sodium in various types of liquor samples sold on the market.This method can detect saccharin sodium in liquor rapidly,sensitively and accurately,and provide an effective detection method for relevant detection departments and enterprises in the production process.2.For the new core-shell type prepared Au@Ag The detection conditions of saccharin sodium in wine were explored.The effects of extraction solvent,pH value of solution,purification powder,acid-base reagent and stripping reagent on the extraction and detection of saccharin sodium in wine were discussed in detail,and the optimal detection conditions were finally determined.It provides a feasible method for the detection of saccharin sodium in wine.3.A rapid method for the determination of saccharin sodium in rice wine was established.The qualitative detection limit was 0.5 mg/l,the quantitative linear range was 0.5 mg/1-50 mg/1,the recovery rate was 94.5-114.6%,and the relative standard deviation was 1.7-7.8%.The qualitative detection limit was 0.1 mg/l,the quantitative linear range was 0.2-50 mg/l,the recovery was 96.8%-105.2%,and the relative standard deviation was 0.6-3.8%,which were all within the normal acceptablerange.
