The Red Globe grape was used as test materials in this research.After disposed by the swelling agent that frequently-used in the grape plantation.The basic physical and chemical index and antioxidant activity of the samples which sampled at the different stages of growth were measured to study the effect on the quality changes during the grape growth cycle by the swelling agent.At the meantime,the preservative paper commonly used in conventional storage was chosen to store the Red Globe,like wise samples were extracted in the different stages of the storage,and the basic physical and chemical index,rotting rate,stem freshness,bleachability,SO2 residual amount,etc were measured to study and assess the effect and risk on the storage quality by the preservative paper.Microsoft Office Excel2007 was selected for the statistical analysis,and the key results as follows:(1)With swelling agent processing of Red Globe grape,fruit shape index had no significant change,but fruit firmness,fruit grain length diameter,single fruit weight are subject to significant effect.Compared with the control,group T3 treatment effect is the best,compared with the control,fruit firmness,fruit weight,fruit grain of longitudinal diameter and transverse diameter,respectively,to enhance 43%,32%,10.9%and 13.2%.(2)With swelling agent processing of Red Globe grape,fruit soluble solid content compared with the control,there was no significant change in,but the fruit titratable acid,solid acid ratio,total sugar received the treatments of swelling agent of influence,titratable acid content,total sugar content decreased,solid acid ratio increased.Which,T1 group fruit titratable acid content decreased most significantly,down 17.8%compared to the control;T3 of solid acid ratio increased most significantly,called control group an increase of 23%,T1 group total sugar content decreased the most significant effect,down 8.2%compared to the control.(3)With swelling agent processing of Red Globe grape,antioxidant activity of fruit affected,which fruit DPPH scavenging ability,metal chelating ability,potassium ferricyanide reducing power after treatments of swelling agent has been improved and fruit hydroxyl radicals also force decreased.T1 fruits.The DPPH scavenging ability and metal chelating force changes the most significant,than those in the control group were increased by 2.5%and 11.6%,group T3 fruit potassium ferricyanide reduction force changes most significantly,compared with the control to enhance the 64%and T3 group fruit hydroxyl radicals also force decreased most significantly,called down by 4.6%in the control.(4)With preservation paper processing of Red Globe grape,soluble solid content,capable of titration acid content by obvious effects,which containing 97.5%coke sulfite sodium wrap treatment effect is the most significant,soluble solids and can titration acid content respectively compared to control enhance 8.7%and 15.4.(5)With preservation paper processing of Red Globe grape,fruit firmness,decay rate,fruit stalk fresh degree received obvious effect,which 97.5%coke sulfite sodium wrap treatment effect is the most significant,fruit hardness increase of 7.5%compared with the control,fruit stalk fresh degree until storage end for grade ?,and for the decay phenomenon.(6)With preservation paper processing of Red Globe grape,rate and SO2 residue was significantly different in fruit bleaching,which 97.5%coke sulfite sodium preservation of paper fruit bleaching rate and SO2 residues were the highest for 18.67%and 8.53 mg/kg.
