Pea sprout vegetable is a fresh sprout vegetable cultivated with pea seeds.It is deeply loved by people because of its high nutritional value,fresh taste,green pollution,and dual use of medicine and food.However,Bud seedlings are not resistant to storage and are prone to decay.With the improvement of people's living standards,people are more and more concerned about the nutritional quality of vegetables.Therefore,In order to investigate the effects of different doses of UV-B irradiation on the growth pattern and nutritional quality of pea sprouts.The purpose of this study is to find a simple and effective way to increase the nutritional quality and prolong the preservation period of pea sprouts.There are two ways for UV-B irradiation to treat pea sprouts:First,UV-B irradiation is carried out during growth.The processing times were 3 min d-1?6 min·d-1?9 min·d-1?12 min·d-1?15 min.d-1;The second method is to irradiate the pea sprouts with ultraviolet radiation on the day before the actual harvest,for a time of 0 h?0.5h?1 h?1.5 h?2 h?2.5 h,respectively.The results are as follows:Daily UV-B irradiation treatment during the growth of pea sprouts,(1)morphological characteristics:It will significantly reduce the plant height of pea sprouts and white jade peas,increase the stem thickness,and make the plants shorter;The results of electron microscope showed that the stem epidermis cells were significantly shortened,the epidermal stomata did not change significantly,and the leaf epidermis stomata increased obviously,and most of the stomata in the field of vision were closed.Precipitation of biomass such as dry fresh weight before irradiation time of 6 min · d-1.(2)Effects of nutritional quality:With the increase of irradiation time,the content of total phenol and photochrome of hemp pea continues to increase compared with the control time,and the soluble protein and total flavonoids were highest at 12 min·d-1.VC and soluble sugar content were highest at the irradiation time of 9 min d-1.Taken together,the irradiation time of 9 to 12 min could significantly improve the nutritional quality of hemp peas.Effect of UV-B irradiation on the quality of white pea:Compared with the control,the total phenol content showed a tendency of increasing gradually,and the pigment content and total flavonoids content were higher under the treatment of 9 min and 15 min.The time of irradiation was the peak of vitamin C content and soluble sugar content under 3 min irradiation.It was found that:(1)there was no significant difference in the morphological characteristics of the pea sprouts treated with UV-B irradiation on the day before the harvest.(2)Effects of Nutritional Quality:The total nutrients of various nutrients,phenols,total flavonoids,soluble proteins,soluble sugars,VC,and pigments in the irradiation time of 0.5-1 h are all at a high level and have the best quality.However,white jade peas had the highest pigment content at 1 h irradiation time,the highest content of 1.5 h total flavonoids and total phenols and soluble proteins,the VC content was significantly increased at 0.5-2 h,and the soluble sugar content was best treated at 2 h.Comprehensive comparison of two different UV-B treatments,The daily UV-B irradiation treatment has a more significant effect on the appearance and morphology of pea sprouts,making its stem stem thick and making the taste more crisp;Second,the content of various nutrients such as total phenols and total flavonoids varies more significantly and increases more,which means that it is more conducive to quality improvement.To further explore the influence of uv-b irradiation on the fresh-keeping of pea sprouts after harvest,we set hemp peas as materials,and set control group,uv-b irradiation treatment group for 12 min a day and uv-b irradiation treatment group for 1 h before harvest respectively,and observe the change trend of various nutrients in pea sprouts after harvest for 35 days.The results showed that the weight of sprouts decreased with the increase of fresh-keeping time,and the content of photosynthetic pigments increased at first and then decreased,the content of total flavonoids and VC decreased gradually after reaching the highest value in 14 days,while the content of total phenols increased after the lowest content in 14 days.In the process of postharvest preservation,the overall trend of 12 min d-1 treatment group was better than that of 1 h treatment group.Summary,UV-B irradiation treatment can improve the appearance of pea sprouts,significantly improve the nutritional quality of pea sprouts,and also has some positive effects on prolonging the postharvest preservation period.it is a simple,economical and effective physical treatment technology with no pollution and residue,and can improve the market competitiveness of peasprouts,thus having a broad application prospect.
