In this experiment,the content of fatty acids in commercially available black eggs and ordinary eggs,chai eggs and ordinary egg yolks were compared by gas chromatography,which provided a theoretical and practical reference for people to choose eggs.On the basis of the preliminary study on the determination of fatty acid content in eggs by gas chromatography,the experiment was carried out with the Gallus domestiaus as the test object.Different concentrations of perilla seed and linseed oil were added to the diet,and analysis of the content of unsaturated fatty acids in egg yolk and egg quality,to explore the appropriate level of addition of perilla seed and linseed oil,in order to provide scientific theoretical basis for the development of DHA and ALA functional eggs in animal husbandry.Test(1)Determination of fatty acid content in commercial black eggs and ordinary egg yolk by gas chromatography.A,B brand black eggs and ordinary eggs,three kinds of egg yolk detected a total of 18 fatty acids,including 6 kinds of saturated fatty acids(SFA),12 kinds of unsaturated fatty acids(UFA),6 kinds of monosaturated fatty acids(MUFA)and 6 kinds of polyunsaturated fatty acids(PUFA).The contents of total fatty acids(FA),SFA,MUFA,PUFA,n-6 PUFA and n-3 PUFA in the three eggs were not significantly different(P>0.05).The fatty acid content of C brand oleic acid(C14:1)in brand A egg yolk was significantly higher than that in brand B(P<0.05),and the content of palmitic acid(C16:1)in ordinary egg and brand A black egg yolk was significantly higher than that in brand A.B brand(P<0.05);A,B brand black egg yolk linoleic acid(C18: 2n6c),?-linolenic acid(C18: 3n3),DHA(C22: 6n3)content is higher than ordinary eggs,but the difference None of them were significant(P>0.05);the ratio of omega-6 PUFA/n-3 PUFA in A brand black egg yolk was slightly lower than that of ordinary eggs,and the ratio of n-6 PUFA/n-3 PUFA in B brand black egg yellow was significantly lower than that of ordinary eggs(P<0.05).Test(2)Determination of fatty acid content in commercial chai eggs and ordinary egg yolk by gas chromatography.A,B,C brand chai eggs and ordinary eggs for fatty acid determination.The results showed that 7 kinds of SFA,7 kinds of MUFA and 8 kinds of PUFA were detected in the test samples.Among them,there was no significant difference in the content of C14:0~C18:0(P>0.05),the content of palmitic acid(C16:0)in Chai egg and ordinary egg yolk was higher;3 kinds of brand Chai egg yolk The contents of oleic acid(C14:1)and palmitoleic acid(C16:1)were significantly higher than those of ordinary eggs(P<0.05).The content of C17:1 in A brand Chai egg yolk was significantly higher than that of C brand Chai eggs(P <0.05);the content of antilinoleic acid(C18:2n6t)and C20:2 in ordinary eggs and C brand chaff egg egg yolk was significantly higher than that of A and B brand Chai eggs(P<0.05);ordinary egg yolk in linoleic acid The content of(C18:2n6c)was significantly higher than that of A and C brand eggs(P<0.05);the content of DHA(C22:6n3)in ordinary egg yolk was significantly higher than that of A brand Chai eggs(P<0.05);3 kinds of chai There was no significant difference in the ratio of n-6/n-3 PUFA between egg and normal egg yolk(P>0.05).Experiment(3)Effect of adding perilla seeds on the content of unsaturated fatty acids and egg quality in Gallus domestiaus egg yolk.In this experiment,280 healthy and 26 weeks old Gallus domestiaus were randomly selected and randomly divided into 4 groups,40 in each group.The outdoor flat ground was free-range,each group had an activity area of 63 m2,free access to food and water,and the control group was fed with foundation.In the diet,the experimental group added 6%,10%,15% perilla seed to the basal diet,and pre-tested for one week,respectively,in the 10 th and 25 th of the formal test.Forty days,36 eggs were randomly selected from each group,24 of which were analyzed by gas chromatography to analyze the content of unsaturated fatty acids(PUFA)and the ratio of n-6/n-3 PUFA in eggs,and 12 were used to detect eggs.Quality indicators.The results showed that on the 10 th,25th and 40 th day,the contents of ALA(C18:3n3)and DHA(C22:6n3)in the egg yolk of the three experimental groups were significantly increased(P<0.05);on the 25 th day,The content of ?-linolenic acid(C18:3n6)in the egg yolk of 10% perilla seed group and 15% perilla seed group was significantly lower than that of the control group(P<0.05),6% of perilla seed group and 10% perilla seed group.The content of tetraenoic acid(C20:4n6)was significantly lower than that of the control group(P<0.05).The ratio of n-6/n-3 PUFA in the egg yolk of the three experimental groups was significantly lower than that of the control group(P<0.05).on the 40 th day,the content of oleic acid(C18:1n9c)in the 10% perilla seed group and 15% perilla seed group was significantly higher than that in the 6% perilla seed group and the control group(P<0.05);Grain added perilla seeds had no significant effect on the content of yolk sputum C14:1,C15:1,C16:1 and C17:1.On the 10 th day,the egg yolk color of the 10% perilla seed group was significantly lower than that of the control group and the 6% perilla seed group(P<0.05);the egg yolk ratio of the test group was significantly higher than that of the control group(P<0.05);on the 25 th day The egg weight of the 10% perilla seed group was significantly higher than that of the control group(P<0.05);the egg yolk color of the 15% perilla seed group was significantly lower than that of the control group and the 10% perilla seed group(P<0.05);on the 40 th day The egg yolk weight of 6% perilla seed group and 15% perilla seed group was significantly higher than that of the control group(P<0.05);the Haas unit of 10% perilla seed group and 15% perilla seed group were significantly higher than the control group.(P<0.05).Experiment(4)Effect of dietary linseed oil on unsaturated fatty acid content and egg quality in Gallus domestiaus egg yolk.The test group of this experiment added 1%,3%,and 5% linseed oil to the basal diet,and other test designs,test animals,and sample collection were the same as test 3.The results showed that when the diet was supplemented with 3% linseed oil and 5% linseed oil,the contents of C18:3n3(ALA)and C22:6n3(DHA)in egg yolk were significantly higher than those in the control group(P<0.05);the experimental group and the control group,there was no significant difference in the content of linoleic acid(18:2n6c)and arachidonic acid(C20:4n6)in the egg yolk group;the ratio of n-6 /n-3 PUFA in the egg yolk of 3% linseed oil and 5% linseed oil group was significantly lower(P<0.05).There was no significant effect on the content of myristic acid(C14:1),palmitic acid(C16:1),C17:1,oleic acid(C18:1n9c)in egg yolk.Dietary supplementation of certain concentrations of linseed oil had no significant effect on egg weight,egg yolk weight,egg yolk color,egg yolk ratio,Hastelloy ratio,egg white ratio,etc.,but had significant effect on eggshell quality(P<0.05).
