In this paper,two varieties of'Gala'and‘Fuji'were selected for study,and the data of quality index changes stored at four temperatures after harvesting were repeated for three consecutive years.The linear fitting of each index with the storage time trend was carried out,and the index with extremely significant determination coefficient was selected as the primary selection index for the change of the quality.The kinetic parameters?activation energy Ea,pre-exponential factor A0?of each primary index response temperature change were obtained.A series of data processing methods,screening key factors,and establishing an Arrhenius model based on 3-years replicate apple shelf life prediction.The predicted values calculated by the model are compared with the measured values obtained by the experiment to determine the accuracy of its prediction for apple shelf life.At the same time,the index factor of the change rate of change rate and temperature change is screened,and the Q100 value is calculated for the shelf life prediction of Q100 model method,in order to provide a variety of product shelf life prediction methods for apple production.The main results are as follows:Based on the three-year repeated'Gala'and'Fuji'apple fruits during storage,the linear trends of various quality indicators with storage time at different temperatures are not the same.Comparing with the storage quality changes at the same storage time and different storage temperature,it was found that low temperature can suppress the changing in quality indicators,delaying the rate of apple decay,thereby increasing the storage time of apples.Quality change indicator of'Gala'apple including hardness,Vc,weight loss rate,b*?yellow blueness?,a*?red and green degree?,?E?total color difference?,C?saturation?and starch content has a good linear relationship with time at each storage temperature,and the coefficient of determination R2is extremely significant;Quality change indicator of‘Fuji'apple including Vc,weight loss rate,b*,?E,and starch content has a linear relationship with time at each storage temperature,and the coefficient of determination R2is extremely significant.The kinetic parameters of the above indicators were calculated by the Arrhenius dynamic equation which are based on the stable value range of Ea and A0,the key factors for the response temperature change of'Gala'apple were 7:hardness,Vc content,b*,a*,?E,C,starch content;4 Key factors?weight loss rate,b*,?E,starch content?for the construction of'Fuji'apple shelf life model.The key factors b*were used to predict the shelf life of the two varieties,and the better prediction results were obtained at each temperature.The'Gala'apple was used;the error intervals were 4.76%11.11%and 1.67%8.33%,respectively.Under other key factors,the accuracy of apple fruit shelf life prediction using Arrhenius model is not the same.The shelf life at lower storage temperatures?0?,5??utilizing the hardness,Vc content,a*,starch content can be better predicted;while the?E and C values can better predict the shelf life at higher storage temperatures?15?,25??,and the relative errors are less than 15%.‘Fuji'Apple uses a model built with four key factors to predict that shelf life has high accuracy at higher storage temperatures?15?,25??with relative error being less than 15%;nevertheless,the accuracy of each model is low,which is not suitable for the shelf life model to predict the storage period under the lower temperature storage conditions with removing the b*value.The Q100 method was used to analyze the rate constants and post-harvest respiration intensity of'Gala'and'Fuji'.In the temperature range of 025?.The starch of both varieties was sensitive to temperature;VcQ100 value can be used as a reference value for predict the shelf life of'Gala'.It is 2.18 in the range of 05?,2.46 in the range of 515?,and 2.8 in the range of 1525?.The value of?EQ100 can be As a reference value for predict the'Fuji'shelf life,it is 1.69 in the range of 0 to 5?,2.91 in the range of 5 to 15?,and 2.59 in the range of 15 to 25?.
