Ganoderma lucidum is a traditional medicinal fungus in China.It is rich in active ingredients and has many functions,such as regulating immunity,antioxidation and antitumor.The triterpenes,polyphenols and polysaccharides are secondary metabolites of G.lucidum.The key to improve the quality of G.lucidum is to improve the content of active components in the fruiting body of G.lucidum.This paper put the fresh fruiting bodies of G.lucidum in different oxygen concentration(20%,40%,60%,80%,100%),exploring the different synthesis effect on active ingredients of G.lucidum,monitoring the change of respiratory intensity,active oxygen metabolism and antioxidant activity of related enzymes to analyse the high oxygen treatment mechanism.Then comparative analysis of the effects of four kinds of drying methods on the composition and the antioxidant activity of G.lucidum to promote the synthesis of active ingredients.The results of this paper are as follows:The fresh fruiting bodies of G.lucidum picking off were put in different oxygen concentration.The change of active ingredients,apparent quality and antioxidant activity show that: Under the condition of room temperature 25?,the flow rate at 60mL/min in 6 days,the rate of weight loss can be effectively suppressed by the mixture of 60% oxygen and 40% nitrogen concentration.The content of triterpenes in the third day treatment was 16.67% higher than the control;There is a correlation between the content of polyphenols and the changes of antioxidative activity in vitro(p<0.05).The function of the antioxidant activity in vitro is gusses to be the total phenol and other substances.The fresh fruiting bodies of G.lucidum picking off were put in different oxygen concentration.The change of active oxygen content and antioxidant enzyme activity showed that the treatment of oxygen concentration of 60% was suitable for G.lucidum fruiting bodies to stimulate stress,can enhance the metabolism intensity,reduce the accumulation of reactive oxygen species,enhance the resistance and antioxidant activity of microorganisms,and promote the formation of active substances;High content of free radicals correspond to highly active antioxidant enzymes,which correspond to high activity respiratory enzymes and apparent respiration.It shows that the action of environmental made the accumulation of free radicals,activated the material response system and increased respiratory metabolism to provide energy;the action of oxygen concentration of 80% and 100% of G.lucidum fruiting is more than its limitation,so It leads to the rapid rise of the response system in the early stage,a large amount of loss,and a weak later stage.The adverse effects of oxygen concentration of 20% and 40% of the adverse effects were not enough,and the strength of the body was not enough to cope with the process of post harvest physiological decay.The results of G.lucidum fruiting body in natural drying,hot air drying,microwave drying and vacuum freeze drying are analyzed.The conclusions are following:Freeze-drying can effectively maintain the color of the G.lucidum fruiting body;There was a certain correlation between the active ingredient content and antioxidant activity of G.lucidum fruiting bodies treated by different drying methods,indicating that the antioxidant activity of G.lucidum was due to the above active substances;Microwave 700 W drying can promote the content of active ingredients in G.lucidum and exhibit high antioxidant activity.
