Perilla frutescens(L.)Britt.is an herbaceous plant of the genus Perilla in the labiaceae family. It has rich planting resources in many Asian countries including China.Leaves, stems and seeds can be used as medicine and have been recorded in the Chinese Pharmacopoeia.Perilla leaves are also of edible value and have been listed as both edible and medicinal plant sources in China. They were already cultivated as early as 2000 years ago.Perilla has an aromatic smell and is rich in oil,so it is still developing impressively in the spice and oil industry.Perilla is a drug of “Jiebiao” in Traditional Chinese medicine, modern studies also show that it has anti-inflammatory,antioxidant,antibacterial,antithrombotic,lipid-lowering and anti-tumor pharmacological effects.Perilla is rich in chemical components, the main active substances include phenolic acid, flavonoids, volatile oil, fatty acids etc.Because of the wide planting area and complex sources of Perilla, the clinical effect cannot be guaranteed. Most researchers at home and abroad focus on the leaves, stems and seeds of Perilla, whereas the flowers and inflorescence of are rarely fully studied and utilized. Therefore,it is necessary to evaluate and compare sources and parts of Perilla based on the pharmacodynamic substances and biological activities of Perilla,so as to optimize the utilization of Perilla resources and promote the development of related product industries.1.Composition analysis and antioxidant activity comparison of Perilla phenols in different sources and partsIn this chapter, the phenolic acid and flavonoid components, total contents and antioxidant activity of leaf, ear and stem of 5 different Perilla sources were measured and compared to evaluate the better Perilla sources and parts.A total of 30 phenolic components including Luteolin-7-Odiglucuronide from three parts of Perilla were identified by LC-MS.At the same time, the contents of total phenolic acids and total flavonoids were determined by chemical coloration method.Through in vitro antioxidant test,we evaluated the potential biological activity of each sample.Pearson correlation coefficient computation showed that antioxidant capacity was significantly correlated with phenolic acids and flavonoids. Finally,we used the hierarchical cluster analysis method to classify the samples, and the results showed that the quality of Perilla leaf and the ear of Source 2 was generally better, which could be temporarily regarded as the optimal drug source.2.Comparison of constituents of volatile oil from different parts of Perilla and evaluation of bacteriostatic activity of volatile oil from Perilla leafIn this chapter focused on the essential oil of Perilla to explore the optimal extraction technology of the essential oil,and the extracted essential oil was analyzed by GC-MS.Finally,the essential oil of Perilla stems was used to evaluate the disease-resistant microbial activity. The results of composition analysis showed that the composition of Perilla varied greatly among different sources, among which the most constituent was in the ear,the second in the leaf and the least in the stem.In the antioxidant activity evaluation experiment, there was no difference in scavenging ability of DPPH and ABTS free radicals between volatile oil from the ear and leaf of Perilla source 2,and no difference in reducing ability between volatile oil from the ear and leaf of Perilla source 1.Volatile oil from Perilla ear showed good antioxidant activity,so it can be considered as a potential medicinal part.
