With the development of the economy and the improvement of the people's living standard, the requirement for life quality is getting higher and higher, especially for the food quality. In recent years, with the increasing demand for fresh products, the cold chain industry has also been greatly developed. How to make the best decision on the inventory of fresh products to promote the cold chain system to earn greater profits, becomes very importance in the cold chain reality. In this thesis, considering the influence of freshness on the deterioration rate and market demand,it studies the ordering decision and selling price from the perspective of retailers. The freshness of cold chain products affects the demand of the consumer market, and then affects the inventory strategy of fresh products and the business decision of the enterprises. This thesis, studies the inventory model that the customer demand is influenced by the freshness and the selling price of the fresh product from the two echelon cold chain dominated by the retailer. In this thesis, the deterioration rate is thought of as correlation with the freshness of the product, and will be increased with the decrease of the freshness. The influence of the decentralized decision and the centralized decision on the profit of the two-echelon cold chain is discussed respectively. And the numerical examples and sensitivities were analyzed. It is found that under the decentralized decision, the deterioration loss with the consideration of the freshness on customer demand is lower than that without consideration the freshness on demand, and both the difference of the deterioration loss and it's acceleration rate are increased as the order cycle increases;under any change of the sales price/ the initial freshness of the product, and the profitability of the centralized supply chain decision is higher than that of the decentralized decision. In the subsequent thesis,in the inventory strategy of fresh products, based on the time variant deterioration rate,a fresh-keeping effort was introduced, and the demand function was established by the selling price and fresh-keeping effort of fresh products. And then, two echelon of distributor-retailers cold chain inventory models are established, and the influences of the sales price and the preservation efforts on the cold chain profits were studied for centralized decision-making and decentralized decision-making models, where the distributor dominates the preservation effort.Through example analysis, sales price and preservation effort level to maximize cold chain profits are demonstrated. Finally, the demand for fresh products is not only affected by the selling price, but also by the freshness of fresh products,so the consumption demand is influenced by the selling price and the freshness of the products and the consumption demand function composed of selling price and freshness is built.Combined with the attenuation functions of freshness of cold chain products into deterioration rate, the problem of joint pricing and inventory of the fresh products is studied.,which is affected by the freshness of the modification rate and the demand is affected by the price and freshness. Then,in the sales cycle, based on the attenuation of the freshness of fresh products, inventory strategy adopts sales discounts to earn greater profit at the same time to reduce losses from the deterioration. In the case of discounted sale, the market demand of the product with the freshness attenuation and the higher price elasticity of customers is discussed. An example analysis shows that when the sales discount point is around 0.8,the consumers have higher demand for products. That is,discount sale helps retailers get higher sales profits.
