| Affected by the macroeconomic background in recent years,ZST's revenue has been greatly reduced.In this case,the operating cost of the hotel continue to climb,profits have declined for years.Based on the analysis of financial data,this paper finds out the reason for the high operating cost is its improper control of raw material cost.To break ZST's embarrassing situation,starting from all aspects of the circulation of raw materials,this paper studies how to control its raw material cost.This article takes the raw material circulation as the main line,following the steps of asking questions,solving problems,and analyzing problems,studies the problems in ZST ‘s raw material cost control.First of all,revealing the problems of raw material cost control in each process: making the budget of total expenditure only according to the previous data before purchasing,poor quality goods influx,inventory backlog,food raw materials waste serious and so on.Then,summarizes the causes of raw material costs out of control are: in purchasing process,pre-cost planning is too simple and improper;in acceptance process,the lack of professionalism leads to an increase in cost;in warehousing process,lack of quota standards to control the stock results in overstock of funds;in processing and application process,the housekeeping department's budget is too broad;the food and beverage department lacks specific quantitative cost standards and so on.Finally,putting forward some cost control methods,such as target cost method,value analysis,ABC analysis,EOQ model calculates economic lot sizes,first-in-first-out pricing method,specific identification,standard cost method and so on,to solve the current problems of ZST raw material cost control.At the same time,to ensure the above cost control methods could be effectively implemented,three safeguards are proposed. |
