With the development of living standards of society,grape wine have been widely popular from the people due to its high nutritional value and unique medical value.In particularly,home-brewed wine have recieved great attention from more and more people of all ages for its convenient production,inexpensive,no additives,better flavor and other characteristics.However,in recent years,the quality of wine brewing wine has become a hot topic of discussion In this paper,we collect the 22 parts of a representative sample of house wine as raw materials from three test specimens Harbin,Shuangyashan,Jiamusi,and its physical and chemical indicators and health indicators were measured.The results were obtained as follows:(1)The alcoholic content,total sugar,titratable acid,volatile acid were determined using 22 home-brewed wines as raw materials.The results showed that the contents of alcohol which reached the national standard were only 11 home-brewed wines,the compliance rate was only 50%.Overall,the alcohol contents were relatively low.The content of total sugar which were less than or equal to 4.0 g/L were dry wines,altogether 18 samples,accounting for 81.8%;The content of total sugar in 22 samples which were more than 4.0 g/L and less than 12.0 g/L were belonging to semi-dry wine,four samples,accounting for 18.2%.The titratable acid content of 22 kinds of house wine samples which were less than 5.0 g/L had four samples,accounting for 18.2%.The content of titratable acid of samples which were more than 5.0 g/L had 18 samples,accounting for 81.8%.The content of titratable acid of samples which were less than 5.0 g/L had 4 samples,accounting for 18.2%.The content of titratable acid which was less than 8.0 g / /L was only sample 18.The average contents of total acid of samples were 16.26 g/L,much higher than the normal average wine.The volatile acid content of the sample 22 kinds of house wine which were in line with national standards were 18,accounting for 81.8%.Volatile acid ranged from 0.15 g/L to 1.05 g/L,which the distribution was uneven.(2)The contents of methanol and fusel oil were tested by gas chromatography of the 22 kinds of wine samples.The results showed that the content of methanol of the 22 kinds of wine samples which were less than 0.04 g per 100 mL were in a total of 14 wine samples,in line with national standards,the compliance rate was 63.6%.Further 8 samples of methanol content exceeded the standard rate of 36.4%.The content of fusel in 22 kinds wine samples were less than 0.2 g per 100 mL,which were all in line with national standards.(3)The total number of colonies and coliform bacteria were tested using the 22 house wine as raw materials.The results showed that 22 kinds of the total number of house wine which fermented in line with our colonies had 17 health standards in total samples,accounting for 77.3%.The results illustrated that coliform colonies of house wine 17 samples which the test piece on media did not present red spots surrounded by yellow halo nor those bubbles were presented negative,indicating the determination of house wine coliforms were not detected which were all in line with national standards.Comprehensive analysis of physical and chemical indicators and health indicators about 22 kinds of house wine samples,the results showed that physical and chemical indicators and health indicators wines in the measured which sample had reached the national standards,the non-compliance rate was as high as 72.7%.Therefore,drinking and brewing of homebrew wine should be careful.
