Wuyishan is a famous tea production area in China,Wuyi Lapsang Souchong produced here is one of the best kinds.Processing technology of Wuyi Lapsang Souchong has vital influence on the quality of tea.This thesis is based on actual processing technology and practical experience and takes Wuyi Lapsang Souchong tea as experimental object.The research of Wuyi Lapsang Souchong processing technology studies the following three aspects:(1)effects of different processing technology on quality of Lapsang Souchong through different withering,different rolling and different fermentation processing experiment;(2)effects of different drying technology on quality of Lapsang Souchong through different drying temperature,different time and different leaf-spreading thickness drying experiment;(3)the most suitable drying processing on Wuyi Lapsang Souchong through optimize parameters experiments.The main results are as follows:1.Research on processing technology of Wuyi Lapsang SouchongThis research carries out on the basis of studies of tea making and processing technologies in Junde factory in Tongmu village of Wuyishan.The results show that:(1)the combination of sun withering and natural withering is better for improving the quality of Wuyi Lapsang Souchong;(2)the suitable extension of tea rolling time can possibly promote the quality of Wuyi Lapsang Souchong;(3)suitable setting of warming and humidification through fermentation cellar betters the quality of Wuyi Lapsang Souchong.2.Effects of different drying process on the quality of Wuyi Lapsang SouchongThrough different drying temperature,different time and different leaf-spreading thickness single factor drying experiments,the results show that:(1)the most suitable temperature of drying Wuyi Lapsang Souchong tea is 110 degrees while drying for 6 hours and with 6cm leaf-spreading thickness;(2)the most suitable time of drying Wuyi Lapsang Souchong tea is 6 hours while drying at 100 degrees and with 6cm leaf-spreading thickness;(3)the most suitable leaf-spreading thickness of drying Wuyi Lapsang Souchong tea is 6cm while drying at the temperature of 100 degrees for 6 hours.3.Research of optimize parameters experiments on Wuyi Lapsang SouchongIn the model of optimizing parameters based on orthogonal experiment,the best combination of drying process of Wuyi Lapsang Souchong is drying at the temperature of 110 degrees for 7 hours with the leaf-spreading thickness of 7 cm.
