Sea urchin is not only delicious,but also rich in amino acids,fatty acids,vitamins,a variety of mineral elements,etc.it has a high nutritional value and health care effect.But it is very easy to produce autolysis,difficult to preserve and transport.In addition to coastal areas,people seldom eat fresh sea urchin gonad.Therefore,in order to prolong the storage time,fresh sea urchins must be processed.However,the traditional processing technology has many defects and lags,so the processing technology of sea urchins needs to be further optimized and upgraded.In this paper,the processing of sea urchin gonad with fresh sea urchin as raw material by advanced vacuum freezing technology was studied,and then the sea urchin gonad was processed into powder by the grinding technology.The solid beverage with special marine flavor was developed with the sea urchin gonad powder.The main results were as follows:(1)Optimization of vacuum freeze drying processing technology of sea urchin gonad:Through Complete randomalized design and Orthogonal experimental design,The parameters of freeze drying processing technology of sea urchin gonad were optimized,The effects of precool time,precool temperature,max heating temperature and vacuum degree on the quality of freeze-dried sea urchin gonad were analyzed,Taking shrinkage,rehydration and sensory evaluation as indicators,the effects of various process parameters on the quality of freeze-dried sea urchin gonad products were explored.At the same time,the best process conditions of vacuum freeze-drying sea urchin gonad under laboratory conditions were obtained: the precool temperature was-25 ?,the precool time was 3 h,the max heating temperature was 60 ?,and the vacuum degree was 60 Pa.(2)Optimization of processing technology of sea urchin gonad Solid beverage:According to the Complete randomalized design results of stabilizer addition,taking the sedimentation rate of sea urchin gonad powder solid beverage as indicators,the Orthogonal experimental design were carried out on the three factors of xanthan content,CMC content and Guar gum content.The results showed that the optimal content wererespectively: xanthan gum 0.1%,CMC 0.15% and Guar gum 0.1%.At the same time,in order to obtain a reasonable sea urchin gonad powder content,white granulated sugar and citric acid ratio,on the basis of the Complete randomalized design,the Orthogonal experimental design was used to obtain the best ratio of sea urchin gonad solid beverage:sea urchin gonad powder 2%,white granulated sugar 10%,citric acid 0.2%.(3)The results showed that the protein content of sea urchin gonad powder was higher than 50%,and the content of trace elements,Zn,Fe and Sr were rich.The average content is more than 100 mg / kg.It can be seen that sea urchin is a kind of food rich in Zn and Fe,which can benefit intelligence,brain and improve human immunity.Moreover,sea urchin gonad powder solid beverage is simple in production,convenient to eat and has a broad market prospect,which will greatly boost the development of Shandong's marine economy.
