Fruits represented by apples and citruses are an important source of nutrients in human daily life.However,during storage,the fruit surface is affected by moisture in the space,causing rot and other problems.The high-voltage electrostatic field is a convenient and low-energy processing technology,which has been widely used in electrostatic dust removal and other fields.However,this technology has been used in fruit storage,especially on the hydrophilicity of fruit skin wax.To this end,this article studies the mechanism of the influence of high-voltage electrostatic field on the surface hydrophilicity of lemon and apple from micro simulation and macro experiment.The main conclusions are as follows:.(1)Analysis of key factors of hydrophilicity of fruit skin.By combing the skin structure of fruits represented by lemon and apple,the key issues affecting its freshness and hydrophilicity are analyzed,and the hydrophilic groups in the key tissues are further analyzed to determine a clear test object for the follow-up test and find the skin wax the most abundant hexadecanoic acid and hexacosane molecules.(2)Microscopic simulation of Materials Studio molecular dynamics software.Use MS software to build the molecular structure of hexadecanoic acid and hexadecane,apply high-voltage electrostatic fields to the molecular structures of the two,and construct a model to predict the optimal solution of the electromagnetic parameters of the high-voltage electrostatic field,and study the polarity of different high-voltage electrostatic fields 1.The relationship between strength and the hydrophilicity of epidermal wax.When the electric field strength is 0.004 au and 0.03 au,the MSD index and the dipole moment value reach the minimum,that is,the hydrophilicity is reduced under the electric field strength of 192kv/m after the electric field treatment,and the hexadecane is added to the static value close to the true value.When the field strength is 193kv/m,the dipole moment and MSD value reach the minimum.After adding the negative electric field strength close to the true value,hexadecanoic acid has a good effect when the high-voltage electrostatic field is-55kv/m,and 29-cosane is effective when the high-voltage electrostatic negative electric field strength is-67kv/m.(3)Macroscopic test of the hydrophilicity of hexadecanoic acid and 29-hexadecane by high voltage electrostatic field.Place hexadecanoic acid and 29-hexadecane in a high-voltage electrostatic field under different electric field strengths and different processing times for processing,and then use fourier infrared spectrometer to detect the functional group changes of hydrophilic molecules,and the high-voltage electrostatic positive electric field is close to When 200kv/m and the high-voltage electrostatic negative electric field strength is-50kv/m,the effect on the hydrophilic functional groups in the two is most significant.(4)To analyze the changes of skin wettability of lemon and apple.Fresh lemon and apple skins were placed in high voltage electrostatic field environment with different electric field strength and different treatment time for treatment,and optical image processing software was used to observe the wettability changes of their skins to analyze their hydrophilicity changes.The results show that the treatment of200kv/m and-50kv/m has the lowest relative expansion ratio,lower hydrophilicity and the best preservation effect.This subject provides a certain theoretical basis and data reference for the preservation of fruits in the high voltage electrostatic field in the future.
