The rice protein after pretreatment is digested with alkaline protease,and then decolorized by powdered activated carbon,and desalted by membrane separation equipment to prepare rice peptide powder.It was determined that the rice protein needs to be pretreated and the process requirements for pretreatment,and then further enzymatic hydrolysis by alkaline protease,and the preparation process parameters for extracting the rice peptide liquid were determined.Subsequent to the industrialization requirements of rice peptid e powder,the extracted rice peptide liquid is subjected to desalination and decolorization treatment,and finally freeze-dried into a powder using a freeze dryer to prepare rice peptide powder.The subject collected rice peptide powder produced by 15 exis ting industries,and tested its physical and chemical properties in accordance with the latest version of the national standard,and analyzed and collated the data.Compared with the requirements of the above preparation process,the test data is analyzed to establish a quality standard system for rice peptides,which provides a reference for industrial mass production.Using pretreated rice protein as raw material,after comparing the enzymatic hydrolysis effect of other proteases,the alkaline protease w as finally used to enzymatically hydrolyze the rice protein,and the optimal enzymatic hydrolysis process parameters were determined as follows: T he material-liquid ratio is 1: 8(g: m L),the amount of enzyme added is 1.5%,the enzymolysis time is 6h,the temperature is 50 ?,and the p H is 10.T he extraction rate of rice peptides was 72.52%.According to the industrialization requirements of rice peptide powder,powdered activated carbon is used to decolorize the enzymolyzed rice peptide liquid.With the decolorization rate as the evaluation index,the best decolorization process parameters were determined: temperature 50 ?,p H 6,addition of activated carbon 1.5%,decolorization time 30 min,decolorization rate of rice peptide liquid was 87.23%.T hen,the membrane separation equipment is used to perform desalination treatment on the decolorized rice polypeptide liquid,and the desalination rate is used as an evaluation index.Because the molecular weight of rice peptides is greater than 1,000,the optimal de salination condition is to select a reverse osmosis membrane for desalination.T he desalination rate is 92%.Finally,the freeze-drying machine is used to freeze-dry the rice peptide liquid to prepare the rice peptide powder.According to the principles o f different production areas and different manufacturers,the rice peptide powder of 15 existing industrial productions is collected,and their physical and chemical properties are tested in sequence according to the latest national standards,and the phys ical and chemical property data of rice peptide powders of various manufacturers are recorded,and the test data is analyzed and sorted.T hen the amino acid analyzer and gel chromatography column were used to analyze the amino acid analysis and molecular w eight distribution of the rice peptide powder.T herefore,the quality standards of rice peptide powder are determined as follows: moisture content ?6%,crude fat content ?1%,ash content ?8%,protein content ?35%(in which The protein content of first-class rice peptide powder ?55%),peptide content ?30%(including the content of first-class rice peptide powder ?5 0%),the relative molecular weight distribution of rice polypeptide is about 2000,and the proportion is about 70%.
