Jinggang pomelo and asparagus are planted on a large scale in the central and southern part of Jiangxi Province.The research of pomelo and asparagus is to identify its biological active ingredients,produce high value products,and further develop the corresponding functional food.In this paper,pomelo peel and asparagus were processed into powder by freeze-drying and ultrafine grinding,and the changes in physical and chemical properties of the powder with different particle sizes were studied.The active ingredients in pomelo and asparagus were extracted.The regulatory effect of pomelo and asparagus on intestinal tract and its possible mechanism were investigated.In this paper,pomelo peel and asparagus were processed into ultrafine freeze-dried powder,which not only increased the stability of its storage,but also ensured its nutrition to the maximum extent.In order to clarify the effect of ultrafine pulverization on the quality of freeze-dried pomelo peel and asparagus powder,the physicochemical effects of ultrafine asparagus powder with different mesh sizes were studied.The results showed that with the decrease of particle size,the soluble dietary fiber of pomelo peel powder increased slightly,but the protein and fat of pomelo peel powder decreased slightly.The chemical composition of asparagus has little difference.Their color changes are obvious.The fluidity and holding water of the powder are worsened,but the wettability,expansive force and emulsification are increased with the decrease of the particle size of the powder.Pomelo peel powder and asparagus powder were obtained by vacuum freeze-drying and ultrafine pulverization.In the process of industrial processing and transportation,improving the characteristics of the powder,controling the influence of adverse factors on the powder,improving the quality of the powder is to meet the needs of actual production.There are a variety of active ingredients in pomelo peel and asparagus.In order to develop functional foods related to the regulation of intestinal function,the active substances related to intestinal tract need to be extracted and purified.The active substances in pomelo may include naringin and synephrine,while asparagus includes saponins and polysaccharides.The active components were extracted and the extraction process was optimized to provide reference for future research and development.The defecation test and intestinal propulsion test in mice verified whether the pomelo peel and asparagus could promote intestinal peristalsis and relieve functional constipation.The results showed that pomelo peel had no obvious defecation function.The regulation effect of asparagus in stimulating intestinal peristalsis is significant,and the regulation mechanism of asparagus in functional constipation is also explored.The results of HE staining showed that the intestinal tract of the constipated mice had inflammation,and asparagus alleviated the symptoms of intestinal inflammation.Immunohistochemical results showed that both asparagus and bifidobacterium bifidum could significantly increase the expression levels of 5-HT4 receptor and VIPR1 in the intestinal tract,thus promoting colon motility and alleviating symptoms of functional constipation.WB test results showed that asparagus can reduce the expression of NOS and the release of inhibitory neurotransmitter NO,thus alleviating constipation symptoms.Thus,asparagus can relieve constipation by increasing excitatory neurotransmitters and inhibiting the release of inhibitory neurotransmitters,and has some relief for intestinal inflammation.According to the result of defecation function test,a functional food with asparagus as the main raw material was developed.The formula is asparagus powder,bifidobacterium bifidum powder,xylo-oligosacc,silica,pomelo peel powder,granulated sugar,citric acid,xanthan gum,gellan gum,pectin and maltodextrin.In this paper,the formula of functional solid drink was optimized,and the product design of the solid drink was completed.
