Rubus chingii var.suavissimus(s.k.lee)l.t.lu is a plant of Rosaceae and Rubusoside,which has the functions of promoting body fluid,moistening lung,relieving cough and throat.Rubus Suavissimus is a sweet tea,sweeter than sucrose,and because it contains a variety of nutrients,it is used as a beverage plant.It has the effects of nourishing liver and kidney,clearing heat and detoxifying,anti-inflammatory,promoting body fluid and moistening lung,relieving cough and throat.Rubusoside is a sweetener for people with diabetes,hypertension,and obesity.In this paper,the sweet tea glycosides(rubusoside)were extracted from sweet leaf tea growing in Guangxi,China.The results showed that sweet tea glycosides had the effect of antagonizing and/or preventing different cardiovascular diseases.Although studies have been carried out in rats to determine its effectiveness,no attractive functional product has been developed so far.In this paper,the extraction methods of tea polyphenols were discussed:firstly,the extraction methods of tea polyphenols were studied.The best extraction methods were ethanol precipitation(70%)and hot water extraction at 90? 120 minutes.The extraction processes of common sweeteners were compared.For example,stevioside is a bioactive component extracted from Stevia Rebaudiana,and its properties are like those of Rubus Suavissimus.The ultrasonic assisted extraction of stevioside was obtained because it is ecological and can be carried out in a short time with a small amount of solvent.High accuracy and simple operation.The optimum irradiation temperature is 70?,solvent ratio is 1:30g/mL,irradiation frequency is 40KHz and power is 200W.Rebaudioside A is another bioactive component extracted by various methods.The highest yield was obtained by precipitation with 50%ethanol in 112 min ° The total recovery was 41.1mg/g.Under the condition of microwave-assisted extraction,118 mL/g(50%ethanol)was extracted at 51? for 16 min.When the recovery is 42.9mg/g,the best value can be obtained.For the ultrasound-assisted extraction(50%ethanol,118 mL/g)the recovery rate was 42.9 mg/g during 43 min.The yield was 11.6%when 20%dry leaves were extracted with hot water under pressure of 2 bar for 20 min.These methods are the most common and with significant development.In this paper,the addition of ice cream was discussed:because ice cream tastes good,it is loved by children and even adults,sweet tea glycosides as sweeteners are attractive to be added to ice cream as active ingredients.Using rubusoside as an active ingredient,make it possible to create products suitable for diabetics and hypertensive patients.Our goal is to replace sugar with rubusoside(because it is 115 times sweeter than sucrose)and add vitamins and probiotics to produce added value.The main concern is how sweeteners affect the texture and composition of ice cream.Stevioside is one of the sweeteners that have been studied the most.Once added to ice cream,they are proved to have good stability and appropriate ice particle size.They can be used in acidic environments,such as thaumatin,a sweetener that works at high temperatures.In addition,Neohesperidin dihydrochalcone also achieves this function and provides texture of ice cream as emulsifier.To increase the added value of ice cream,vitamins and other ingredients can be added as carriers.Vitamin D has good stability and is reported to improve health.Chia seeds are also a good choice because once hydrated,they can be used as natural emulsifiers.Finally,Aspen Plus is used to simulate the factory and determine the cost of the ice cream production line.Aspen Plus is a software,which needs to consider the physical characteristics such as the properties of components,the composition of mixture,the range of pressure and temperature,and the availability of parameters.The thermodynamic model used is that Peng Robinson and plant design follow the principles of the ice cream industry.Industrial production factories have certain order and system to adapt to different regulations of equipment,they are developed countries.The total cost of capital is US$2206500.00,and the estimated annual profit is US $77630.20.Due to the exothermic reaction in the process,the efficiency of the pump and turbine is 30%.The results of this study can promote the practical application of sweeteners like rubusoside in ice cream.However,the effect of rubusoside on the texture,freezing point and melting point of ice cream needs further study.
