Chewing simulator is a kind of device that can effectively simulate the chewing action of human mouth.The required parameters,such as mastication force,speed,acceleration,etc.,can be obtained through the signal collection system attached to the mastication simulator.In this study,a new occlusal simulation device was developed to combine subjective sensory evaluation of food with objective instrument measurement.The study also established the relationship between the force of human body and subjective sensory perception when occluding different food,and provided a new measurement method for accurate evaluation of food texture properties.(1)Based on the principle of multi-link structure,a new occlusal simulation device was designed,which could realize the movement trajectory of human's first bite in the sagittal plane and measure the change of bite force in horizontal and vertical directions simultaneously.(2)The 3D modeling and motion simulation of the main motion mechanism were carried out by using the related design software,and the relative motion range of the upper and lower cutters was verified.The results showed that the device can effectively reproduce the trajectory of human oral movement,so as to realize the simulation of occlusal movement(3)By changing different tooth model and by using occlusal simulation device was measured by different subjects bite bite in different food in the change of horizontal and vertical direction,and the test results with the corresponding test object compares the corresponding food sensory evaluation,preliminary got a food texture performance relationship between subjective assessment results and bite.The feasibility of the new occlusal simulation device for food quality measurement was verified.It provided a new idea and method for the study of food texture.
