Deoxynivalenol(DON)is the main mycotoxin in scab wheat,which can be degraded by gaseous ozone.Because of the great difference in the degradation effect of ozone on DON standard and DON in scab wheat,this study firstly used ozone to treat DON standard,DON in scab wheat and their components under different conditions,the effect and regularity of ozone degradation of DON in different substrates were studied.Secondly,the components of wheat were separated,and the inhibiting effect of wheat bran,starch and protein on ozone degradation of DON in wheat scab was investigated.Finally,ozone degradation of wheat with the largest DON barrier components were further studied,and the main components that affected the degradation of DON by ozone were identified and the reasons were explained.The results prove that:(1)Ozone can degrade DON in wheat and scab wheat under different conditions,and the degradation rate of DON is much higher than that of DON in scab wheat.The degradation rate is affected by many factors such as ozone concentration,ozone treatment time and water content.(2)In the process of ozone degradation of DON in scab wheat,both wheat gluten starch and protein have significant hindrance to the degradation effect,and protein has the greatest hindrance to the degradation effect.(3)In the process of ozone degradation of DON in wheat,gliadin has a significant hindrance to its degradation effect,the hindrance may be that ozone oxidizes the free sulfhydryl group of gliadin to form disulfide bonds,which promotes the aggregation ability of protein,strengthens the network structure,weakens the penetrating effect of ozone,and thus leads to the degradation efficiency of DON in gliadin.The above studies preliminarily clarified the reason why the ozone degradation rate of DON in scab wheat was much lower than that of DON standard,so as to provide theoretical support for improving the degradation effect of DON by ozone in scab wheat.
