| DON is a hazardous trichothecene mycotoxin worldwide,which could pose severecontamination on grains and food.In this study,we examined the effect of elcctron beamirradiation on the degradation of DON in the scab wheats and aimed to reduce the content ofDON in wheats and food,hoping to ensure the national grain security and people’s health.We conducted experiments with the wheats collected from Jiangsuã€Anhui and Henan of2012.After studying the effect and influencing factors of electron beam on the degradation ofstandard DON solution and the scab wheats,as well as the effect on the quality ofpost-irradiated scab wheats,we come to the conclusion that this method of treatment on thescab wheats is of great promoting values.The results are as follows:(1)Electron beam irraditation has obvious effect for degradation of pure DONsolution.with the increase of electron beam irradiation dose,the content of DON in puresolution gradually decreased,DON degradation rate increased.However,The Pure DONsolutions with different concentrations,the degradation of DON effects showed obviousdifference within0-20KGy irradiation dose.(2)Electron beam irraditation can effectively degrada DON in scab wheat.with theincrease of electron beam irradiation dose,the content of DON in scab wheat graduallydecreased,DON degradation rate increased.However,Wheat scab in different degree ofinfection showed obvious difference about the degradation effects of DON within0-20KGyirradiation dose.(3)The0-20KGy Irradiation dose,change the scab wheat moisture content and physicalform,but have no significant Influence to the degradation effect of DON in scab wheat.(4)Scab wheat after electron beam irradiation,the quality indexes of flour wereaffected.when the irradiation does was0-20KGy,with the increase of irradiation dose,thegreater influence to the quality of flour would produced. |
