With its unique quality and rich nutrition,green cabbage is loved by consumers.However,in the process of storage,there are some problems such as short shelf life,easy water loss and decay,which lead to the decrease of commodity value.Therefore,it is of importance to study the storage and preservation technology of green cabbage.In this paper,the optimal storage parameters and stacking simulation method of green cabbage were determined through the ultraice temperature storage experiment.The results are as follows:Firstly,the effects of different kinds,concentrations and treatment time of freezing point regulators on super freezing temperature of green cabbage were studied.Sorbitol,calcium chloride,glucose and lactose at concentrations of 0.5%,1%,2%and 3%were used to treat green cabbage for 10min,20min,30min and 40min,respectively.Then the experiment of ultra-ice temperature was carried out under atmospheric pressure,the experimental group was 64,and the temperature changes with time were recorded.Plot the super glacial freezing curve of green cabbage.The experimental results showed that calcium chloride was the best freezing point regulator to change the ultra-ice temperature value of green cabbage,and the ice temperature of green cabbage was reduced from-0.8? to-1.6? after treated with 2%calcium chloride solution for 40min.Secondly,entity cold storage experiment of green cabbage was carried out under atmospheric pressure at ultra-ice temperature.According to the ultra-ice temperature values measured by four kinds of freezing point regulators(sorbitol,calcium chloride,glucose,lactose),the best 4 groups of parameters after each regulator treatment were selected,a total of 16 groups,to conduct the ultra-ice temperature entity cold storage experiment of green cabbage.The storage period was 40 days,and the data were tested every five days.The changes of weight loss rate,rot index,vitamin C content and respiratory intensity were measured and analyzed to determine the best storage process parameters of green cabbage in ultra-ice temperature entity cold storage.Then,the simulation results and experiments of four stacking methods were verified,and the simulation of temperature field and velocity field of green cabbage ultra-ice temperature entity library with three different stacking methods was completed.The temperature field and velocity field were simulated during the storage of green cabbage in the ultra-ice temperature entity cold storage.According to different stacking methods of green cabbage in physical storage,physical and mathematical models of three kinds of entity cold storage stacking goods were established,and the parameters of porous media model were determined and simulated.Through the analysis of cross sections(X=9.4m,X=15.6m)and cross sections(Y=4.5m,Y=11.5m),the cloud map distribution of temperature field and velocity field of green cabbage at ultra-ice temperature entity cold storage was obtained,which provided theoretical reference for the optimization of cargo placement and spacing Settings in the cold storage.Finally,the optimal technological parameters and stacking methods were determined by comprehensive analysis of experimental data and numerical simulation results under different stacking methods.
