Study On Extraction Technology And Physiological Activity Of Soluble Dietary Fiber From Safflower Seed Meal And Its Application

Safflower is a traditional Chinese medicine in China.Safflower seed is the seed of safflower.Safflower seed oil is known as the "king of linoleic acid".Safflower meal contains a lot of dietary fiber and has a variety of physiological functions,but there is no research on safflower meal dietary fiber at home and abroad.In this study,the extraction process of soluble dietary fiber(SDF)from safflower seed meal was optimized,and the physiological activities of SDF were determined,including physicochemical properties,functional properties and antioxidant capacity.Then,the hypidemic effect of SDF on high-fat mice was studied.Finally,bread was developed by using SDF from safflower seed meal.The main results are as follows:(1)Using safflower seed meal as raw material,safflower seed meal was extracted by microwave-assisted enzymatic method.On the basis of single factor,four factors including solid-liquid ratio,enzyme addition amount,enzyme extraction time and microwave power were selected as response variables.The optimal extraction parameters of SDF from safflower seed meal were solid-liquid ratio of 1?25(g/m L),enzyme dosage of 2.0%,enzyme extraction time of 2.0 h and microwave power of300 W.The model verification experiment was carried out under these conditions,and the results showed that the extraction rate was 20.81%.(2)Will extract of safflower seed meal SDF and safflower seed meal raw material physical and chemical properties,adsorptivity and the comparison of oxidation resistance,including the hydraulic,expansion force,oil force,cation adsorption,adsorption of glucose,cholesterol absorption ability,ability to · OH radical scavenging,DPPH radical scavenging ability,found safflower seed meal on SDF whole is better than that of safflower seed meal raw material.(3)The high-fat model of mice was established,and the mice were fed with the feed containing safflower seed meal SDF,the results show that the safflower seed meal can Safflower seed meal can significantly reduce the rate of weight gain in rats,significantly reduced in rats serum total cholesterol,low-density lipoprotein cholesterol and atherosclerosis index.It has no significant effect on decreasing the content of high density lipoprotein and triglyceride in serum.(4)With high gluten flour as the base material,different proportions of safflower seed meal SDF were added into bread,and the effects of different amounts of SDF on bread quality were studied by sensory score,measurement of bread specific volume,texture characteristics,aging degree and water retention.The results showed that when the amount of SDF was 2%,the highest sensory score of bread was 92.3.At this time,bread had high elasticity,low hardness,soft and delicate taste,moderate chewability,and was most popular among people.
