Red yeast rice is a coloring additive of rice fermented by microorganism.Indica rice is often used as raw material for rice red yeast fermentation,while glutinous rice is rarely used for rice red yeast production.This paper select indica glutinous rice as raw materials,the use of red aspergillus to fermentation of glutinous rice,made of red yeast glutinous rice,red yeast glutinous rice in order to better application in the food industry,this article choose different fermentation time,pigment content of red yeast glutinous rice with different materials,on the basis of establishing mouse model of high cholesterol,raised by lavage method in mice,the food safety of red yeast glutinous rice.It provides the basis for its development in food processing.The main findings are as follows:1? With the increase of the fermentation days of red yeast glutinous rice,the protein content,ash content and oil content in red yeast glutinous rice increased,while the moisture content changed little.Protein content increased from 6.98% to 32.04%,ash content increased from0.27% to 4.12%.The oil content increased from 0.89% to 4.86%.2.?In the fermentation process of glutinous rice as the substrate,the content of GABA was the highest at 7 days,but decreased after 10 days.In the fermentation process,the amino acid variation trend of red yeast glutinous rice is different,indicating that the fermentation process is not an invariable reaction.As the fermentation progresses,both the substrate and the fermentation products change.3? A hypercholesterolemia model was established in C57L/6J mice,whose body weight was significantly increased compared with that of normal mice.There was also a significant increase in serum cholesterol in the mice.Compared with normal mice,the number of white blood cells and neutrophils in the routine blood of hypercholesterolemic mice were significantly increased,indicating that there was obvious inflammation in the hypercholesterolemic mice.The number of white blood cells and neutrophils decreased significantly in hypercholesterolemia mice fed with red yeast glutinous rice,which indicated that red yeast glutinous rice had a certain therapeutic effect on inflammation in mice.4?The content of AST and ALT in serum of hypercholesterolemia mice was significantly higher than that of normal mice,but the content of albumin in serum was significantly lower than that of normal mice.The contents of AST and ALT in serum of mice fed with glutinous rice red yeast were significantly decreased,while the content of albumin was significantly increased.Combined with liver index and liver slices,glutinous rice red yeast had a certain improvement effect on the inflammation caused by fatty liver of mice.The serum urea content of hypercholesterolemia mice was significantly different from that of normal mice.From the view of renal index and section,the change of kidney was not obvious,indicating that the improvement effect of glutinous rice red yeast on kidney was not as good as that on liver.5?In general,red yeast glutinous rice can relieve the inflammation caused by hypercholesterolemia in mice to a certain extent,and the effect of red yeast glutinous rice fermented for 7 days is the best.The 2% concentration of red yeast glutinous rice had better effect than 2‰ concentration of red yeast glutinous rice.The effect of red yeast glutinous rice fermented for 10 days was better than that fermented for 3 days.
