Selenium is an important element in plants and animals and is involved in regulating metabolism.Sweet rice wine made from glutinous rice is a traditional Chinese cuisine.In order to understand the edible value of selenium-rich red glutinous rice sweet rice wine,and provide a certain theoretical basis for the development of selenium-rich red glutinous rice deep-processed products.The current research was conducted by observing the differences in nutritional ingredients,functional components,and antioxidant capacity in the different wines produced from germinated brown rice,brown rice,polished rice of selenium-rich red glutinous rice and non-selenium-rich white glutinous rice genotypes.The main conclusions are as follows:1.Fermentation temperature,the percentages of rice leaven,and fermentation time all have a great impact on the fermentation components of sweet rice wine,especially fermentation temperature.In this test,it was found that under the conditions of a fermentation temperature of 30 ° C,0.4% of rice leaven,and a fermentation time of 2 days,the quality of sweet wine was better.Selenium-rich red glutinous rice sweet rice wine brewed with higher total sugar and reducing sugar content than non-selenium-rich white glutinous rice sweet rice wine and with higher raw material utilization,especially Z5097B(the raw material has the highest selenium content).At the same time,the solid acid ratio and sugar acid ratio were also larger,and the quality of sweet rice wine was better.The proportion of flavor amino acids in sweet ricewine brewing is: bitterness,sweet taste >delicate flavour,tart flavour > astringent taste.The essential free amino acids in sweet rice wine fermentation made from high-quality materials accounted for 40% of the total free amino acids.2.The total selenium content of selenium-rich sweet rice wine was significantly higher than that of non-selenium-rich sweet rice wine,and most of them were in the form of organic selenium.Whether it was a selenium-rich or non-selenium-rich sweet rice wine,selenium is mainly present in the non-free form of the sweet rice wine,and most of it was present in the distiller's grains(about 10?20% of the extracted selenoprotein from the corresponding material),only a small part of selenium was present in the wine juice.3.Compared to white glutinous rice sweet rice wine,red glutinous rice sweet rice wine contained more flavonoids,polyphenols and other functional ingredients.And the content of total flavonoids and total polyphenols increased in order: brown rice sweet rice wine > germinated brown rice sweet rice wine > polished rice sweet rice wine.4.In terms of antioxidant capacity,the antioxidant capacity of selenium-rich red glutinous rice sweet rice wine was significantly higher than that of non-selenium-rich white glutinous rice sweet rice wine.The brown rice sweet rice wine had the same antioxidant capacity as the germinated brown rice sweet rice wine,and both were stronger than the polished rice sweet rice wine.In summary,natural selenium-rich red glutinous rice is a very good raw material for sweet rice wine production,and the high-quality sweet rice wine made with it has high nutritional value and health care effects.
