| Luxury cruise ship can not only complete the task of maritime manpower transportation,but also meet the needs of the normal life of the personnel on the cruise ship.In the process of sailing on the sea,customers of different countries have different dietary needs.The cooking methods of Chinese cuisine is mainly fried and boiled.In the process of cooking,due to cooking oil and ingredients are heated at high temperatures,a large number of lampblack will be released.If the lampblack cannot be discharged in time,it will not only break the hot and humid environment of the kitchen,but also expose the chef in the working area to a high concentration of lampblack for a long time.As the sailing time increases,a series of adverse reactions will occur.Therefore,the kitchen needs to maintain a good form of airflow organization.In this paper,the structural parameters of air distribution and exhaust hood of the cruise kitchen under different ventilation device combinations are studied.It provides theoretical basis and technical support for the design and construction of cruise ship kitchen.The specific work is as follows:First of all,based on the measured data of experimental kitchen,three common turbulence models are used to simulate the air distribution in the experimental kitchen.Compared with the temperature values at the experimental points,it is found that the RNG k-εturbulence model is the best one for the temperature distribution in the kitchen.On this basis,with the typical cruise kitchen as an example,the changes of air distribution in kitchen under four different ventilation device combination way are studied,in the case of constant air supply and exhaust volume,change the air volume ratio of ventilation device,explore the best ventilation combination of the kitchen.When the study came up with a combination of four ventilation devices effects,the air distribution in the kitchen is the best,and can effectively reduce the energy consumption of the air conditioning system.Then ensure the ventilation device position and air volume ratio unchanged.The simulation of the change of the airflow organization in the cooking zone when the four working conditions of the exhaust hood condensation plate angle,the exhaust hood air curtain combination form,the exhaust hood air curtain jet angle,and the exhaust hood inner volume are changed.It is found that the control effect of pollutants is the best when the down aircurtain and the side air curtain exist at the same time.And the best jet angle of the down air curtain is 15°-25°.When the condensation plate angle is-5°,the collection efficiency is the highest.With the increase of the volume of exhaust hood,the capture efficiency of exhaust hood also increases.Finally,the orthogonal experiment is designed to explore the influence weight of the four structural parameters on the capture efficiency of the exhaust hood,from the big to the small:the combination form of the air curtain > the angle of the condensation plate of the exhaust hood > the volume of the exhaust hood > the angle of the air curtain jet. |
