Abstract/Summary:
The determination of the optimal aging time of carcass is an important job in slaughter process of mutton sheep,which highly relative to the quality of mutton products.At present,the commonly used methods for judging the optimal aging time of carcass mainly focus on analyzing the changes of related chemical indicators over time during the maturation process,so as to obtain the basis for judging the optimal aging time.However,the above methods are difficult to apply in practice due to insufficient real-time performance.Therefore,this article aims to explore the method of determining the optimal aging time of sheep carcass in the large-scale production process,taking the deformation phenomenon of carcass as the starting point,based on the conclusions of traditional methods,use laser scanning technology to explore the feasibility of judging the optimal aging time by observing the deformation of the sheep carcass during the maturation process,developed a real-time monitoring and reporting system for the best aging time of the carcass with depth sensor,which provides a basis for real-time monitoring and automatic transferring of matured carcass.This article mainly introduces the following contents:(1)Take Bamei mutton sheep and Dorper sheep carcass as test samples,use laser scanner to collect point cloud models of samples at a certain time interval during maturation process and observe the deformation of the carcass models after point cloud denoising and registration to verify the existence of deformation in the carcass maturation process;(2)Locate the position with relatively significant deformation on the carcass as the regions of interest and calculate the deformation quantity.While collecting the point cloud model,measure the pH value and water loss rate of the meat sample in the region of interest simultaneously.Through calculations,the correlation coefficients between the deformation quantity and the two indicators above reached 0.875 and 0.943 respectively,which verified the feasibility of determining the optimal maturity time through the deformation of the carcass during maturation based on the conclusion obtained from the traditional method.(3)Based on the above conclusions,a depth sensor-based monitoring and reporting system of optimal maturity time of sheep carcass was developed,in which can measure the deformation quantity of regions of interest at certain time interval in the mature process.At the same time,the sensor was able to locate and track the regions of interest of multiple carcass and report the best maturity time of each carcass respectively.(4)Set the monitoring distances between the sensor and the carcass at 0.5m,0.7m and 1m,tested the following four parameters of the system at different monitoring distances:(a)The optimal number of monitoring samples under different distances;(b)The average time deviation between the system reporting time and the time obtained through the pH value;(c)the detection rate within 24h;(d)The accuracy of system reporting time when the accurate time deviation is within 1h.The results show that under the experimental environment of this article,the overall detection rate of the system reached 77.3%,the overall monitoring accuracy rate reached 64.7%,and the average time deviation remained within 60.33 min,which can create conditions for the application of the optimal maturity time of the carcass in the actual production process.
