The Inheritance Study Of Production Skills Of Taiyuan Pasta From The Perspective Of Intangible Culture Heritage

Taiyuan pasta have a long history,a wide variety of patterns and excellent production techniques,and they are not only the main character of people’s daily meals,but also an important part of the festival,life rituals and social life,containing rich cultural connotations and having important ritual functions.Since 2008,pasta such as Taiyuan sliced pasta,dragon whiskers pasta,Orecchiette,Minjian pasta and Jinyang Flower Buns have been included in the Intangible Cultural Heritage List,under the category of production techniques and traditional arts,which reflect the important historical,cultural and artistic values of Taiyuan’s Intangible Cultural Heritage pasta.However,with the development and changes of society,Taiyuan Intangible Cultural Heritage of Noodle Category is facing many challenges in inheritance and protection.Therefore,based on the theories of folklore,food anthropology,cultural anthropology,ethnology and other related disciplines,this article takes the inheritance of Taiyuan pasta making skills as the research focus,starts from the perspective of folklore and intangible cultural heritage protection,and sorts out and analyzes the cultural characteristics,folk applications and production processes of Taiyuan pasta through fieldwork,depth interviews,documentary analysis and oral history research methods,and selects representative inheritors,folk inheritors and inheritance enterprises of Taiyuan pasta intangible cultural heritage for case analysis.It shows the inheritance context,inheritance method,survival status and difficulties faced by the inheritors,and then explores the scientific development path of inheritance and protection of Taiyuan pasta making skills.The whole article begins with an introduction and ends with an epilogue,and the main text is divided into six chapters.The first chapter is an introduction,which sorts out the relevant research results of the academic community and makes a brief review,elaborates the research purpose and significance,research methods,data sources and innovation points,and points out the key points of the paper.The second chapter mainly describes the production environment of Taiyuan pasta,sorts out and introduces the natural geographical environment and historical and cultural environment of Taiyuan,and then quotes and summarizes the regional characteristics of Taiyuan pasta culture.Chapter 3 introduces the main pasta customs in Taiyuan City,and explains the symbolic and cultural significance of pasta in festivals and life rituals by combing the application of pasta in festivals and life rituals.Chapter 4 describes in detail the historical origin,production process and core technology of Taiyuan intangible cultural heritage pasta making techniques,and summarizes its improvement and innovation in production tools,color types and tastes based on field research and textual materials.In the fifth chapter,four inheritors of Taiyuan’s traditional pasta making skills and two inheritance enterprises are selected for case analysis,presenting the living space and inheritance experience of the inheritors through the writing of oral history,analyzing the development process and current situation,business model and skill inheritance of the inheritance enterprises,and summarizing the inheritance methods of the inheritance subjects.Chapter 6 mainly analyzes the problems in the inheritance and protection of Taiyuan pasta making skills from the aspects of lack of successors,people’s forgetfulness of traditions and folk customs,and insufficient government protection and publicity,and proposes solutions to existing problems,trying to explore a better inheritance and development path for Taiyuan’s traditional pasta making skills.The whole article selects the methods of literature research and semi-structured interviews,takes field research as the basis for research,mainly discusses the inheritance of traditional pasta making skills in Taiyuan,and focuses on the life experience,learning and inheritance methods of the inheritors of intangible cultural heritage of pasta,aiming to explore the changes and dilemmas faced in the contemporary inheritance and development of intangible cultural heritage pasta making skills,and put forward practical suggestions and solutions for practical problems.Arousing the attention of local governments,elites and ordinary people to the intangible cultural heritage of pasta and their related inheritors,and strengthening their inheritance and protection of it,the traditional pasta making skills of Taiyuan can be passed on and develop healthily and sustainably.
