Tea is one of China’s traditional drinks and an important part of tea culture as the birthplaces of tea.Tea culture in Yunnan has a long history. The abundant tea resources and unique tea processing techniques have attracted the attention of many people who interested in it and many scholars.Among them,Yunnan’s tea processing techniques are an significant part of Yunnan’s intangible cultural heritage, which is of great significance in tea production, tea culture inheritance and economic development. However, with the intervention of modern production methods, changed in lifestyle and transformation in market demand, tea processing techniques were facing severe tests and challenges. This study collected relevant data and information through methods such as questionnaire survey,on-site investigation, and interview research, and established the EFQM Excellence Model based on this.Research on the inheritance of tea processing techniques in Yunnan’s intangible cultural heritage showed that:(1)The survey showed that the awareness of tea culture of ethnic minorities in Yunnan Province is high and the awareness of intangible cultural heritage and its protection measures is fair.In the intangible cultural heritage projects related to tea,tea processing techniques as an significant component, had a high level of recognition and attention. The public recognized the inheritance and development value of tea intangible cultural heritage projects but there was still appeal to strengthen publicity, popularization, and protection efforts to promote the inheritance and development of intangible cultural heritage.(2)On site analysis and investigation of the production techniques of Pu-erh tribute tea,Taetea Pu-erh tea,Xiaguantuo tea,Yunnan black tea and De’ang sour tea,as well as the five national level non legacy tea processing techniques showed that the highlights of each intangible cultural heritage production technique, they all had profound historical connotations, clear traditional craftsmanship processes, strict quality control and was constantly inherited and innovated. The regional and ethnic characteristics were prominent, the brand construction were relatively mature and the current situation of inheritance were good.(3)Value analysis showed that the five national level tea processing techniques all had significant historical and cultural value, economic value, intangible cultural heritage inheritance value and the spiritual value of craftsmen. The EFQM Excellence Model was used to explore the inheritance management and performance evaluation of non legacy tea techniques in the production of De’ang sour tea.The preliminary evaluation results confirm that the corresponding measures could be implemented and the model can be implemented.(4)It was proposed that the cultivation of inheritors of intangible cultural heritage skills should adopt a diversified inheritance and cultivation method of master apprentice inheritance+social skill training+university system education.Increasing investment in publicity, focus on cultivating the quality of inheritors, and create a large number of inheritors of intangible cultural heritage skills with the spirit of craftsmanship.Adopting the methods of intangible cultural heritage empowerment and product innovation to liven up the inheritance of non heritage tea techniques. This study provided a theoretical basis for stimulating technological innovation, enabling technology, promoting cultural integration and development and promoting the living inheritance of traditional culture through the inheritance of traditional intangible cultural heritage techniques.Through these theoretical foundations, aimed to protect and inherit the tea processing techniques of Yunnan’s intangible cultural heritage, integrate them with modern society and revitalize them.Contributing to the inheritance of Yunnan’s intangible cultural heritage tea processing techniques and the development of Yunnan’s tea industry.
