| In this study,the effects of different growing areas(Heilongjiang Province,Liaoning Province,Hebei Province,Tianjin Province,Jiangsu Province and Hubei Province)and different fertilization conditions in the same growing area(Tianjin Province)on the eating quality of rice Tianlongyou 619 were studied.The effects of different habitats on the eating quality of rice Tianlongyou 619 were characterized by measuring the thermodynamic properties,viscosity properties,basic components,rheological properties,appearance quality of rice and other physicochemical parameters.It provides theoretical basis for improving the eating quality of rice by changing the growth environment.The results were as follows:The results showed that there were significant differences in the basic components,thermodynamic properties,rheological properties,viscosity properties and relative crystallinity of Tianlongyou 619 planted in different areas.The cooking temperature of Tianlongyou 619 grown in Tanghai,Hebei Province and Macheng,Hubei Province was higher than that in other places.The rice planted in Tanghai,Hebei Province,Jiangsu Province and Hubei Province had higher viscosity,lower hardness,lower head rice rate and higher chalkiness.Combined with sensory evaluation,we can see that the rice Tianlongyou 619 quality in Tanghai was lower than that,otherwise,the rice Tianlongyou 619 planted in Tianjin and Heilongjiang Province had the best eating quality..There was no significant difference in protein content and amylose content among the basic components planted in different fertilization areas,and the thermodynamic and rheological properties had no significant effect.The results showed that rice Tianlongyou 619 planted in no fertilizer area and conventional fertilizer area had better taste quality than the other two fertilization areas.It is found that the natural ecological environment of the growing area will greatly affect the eating quality of rice,and the suitable growing place of rice can be selected to improve its economic value through the determination of various indicators.Except gel consistency,fertilization conditions had little effect on each index of rice,which indicated that for Tianlongyou 619,fertilization conditions could not significantly change the eating quality of rice. |
