| Rice is one of the world’s top three food crops and is a staple food source for more than half of the world’s population.Selenium cannot be directly synthesised by the body,while the organic selenium in selenium-rich rice can supplement the body’s dietary selenium content.In recent years,with the development of social economy,people are paying more and more attention to food health,and selenium-rich rice is gradually entering people’s vision.Many selenium-enriched agricultural products on the market are currently used to increase the selenium content of rice by exogenous application of selenium,but the effective absorption and utilization of selenium is far less than that of selenium-enriched materials,and the application of exogenous selenium can easily lead to selenium toxicity.In this experiment,selenoprotein microcapsules were extracted and prepared from selenium-enriched rice Z5097 B.Three doses of selenoprotein microcapsules were used to investigate the antioxidant activity and optimal intake dose of selenoprotein enrichment using the same dose of sodium selenite microcapsules fed to mice injected with D-galactose to cause senescence.The main findings were as follows:1.Selenoprotein has strong antioxidant capacity,in vitro experiments show that the total reducing capacity of selenoprotein reached 0.93,the scavenging rate of DPPH free radicals reached 95%,the scavenging rate of hydroxyl radicals reached 58%,much higher than the control bovine serum albumin(BSA).2.Using selenoprotein extracted from selenium-enriched rice Z5097 B,it was found that selenoprotein had a positive effect on inhibiting aging in model mice by feeding aging mice injected with D-galactose,while administration of sodium selenite tended to cause selenosis.3.It was observed in mouse liver and kidney sections that 60μg/kg of selenoprotein had a good repair effect on oxidative damage in liver and kidney,100μg/kg of selenoprotein may lead to early selenosis,while low dose(30μg/kg)of selenoprotein may be less effective in relieving aging due to insufficient selenium concentration.4.Selenoprotein was able to alleviate the abnormally elevated organ coefficients in aging mice.The same concentration of inorganic selenium did not significantly improve damage such as organ congestion,edema or hypertrophic hyperplasia in aging mice,and may even exacerbate organ damage,and excessive amounts of sodium selenite predispose to selenosis.5.The moderate concentration(60μg/kg)of selenoprotein was more effective in enhancing the T-AOC,SOD and GSH-Px contents and reducing the MDA levels in the organs of mice,and showed good antioxidant capacity in all organs.In conclusion,selenoproteins have obvious antioxidant effects and can exert better antioxidant activity when the selenium concentration is 60μg/kg.This study provides a reference for the role and application of selenoprotein in food health care. |
