Objective To investigate the antioxidant activities of different extracts from Terminalia chebula Retz. fruit and the different fractions of ethyl acetate phase. The anti-lipid oxidation activities of bioactive substances from Terminalia chebula Retz. fruit and synthetic antioxidants were compared. And the anti-lipid oxidation activities and free radicals scavenging capability of Terminalia chebula Retz. fruit and gallic acid^ ascorbic acid、a-tocopherol complex also were compared. Effects of Glycyrrhiza uralensis Fisch. Extract (GUE) and Terminalia chebula Retz. extract (TCE) compound antioxidants on the oxidation degree of nutrition-based blend oil. Methods Bioactive substances were extracted from the fruits of Terminalia chebula Retz. by ultrasound method, and then the extract was partitioned with ethyl acetate and n-butanol successively. The extract yield, contents of total phenol and antioxidant activity which were evaluated by scavenging capability of ABTS (2,2’-Azino-bis (3-ethylbenzthiazoline-6-sulfonic acid) diammonium salt) and DPPH (1, l-Diphenyl-2-picrylhydrazyl radical) free radicals of different fractions were compared, and the antioxidant activity of ascorbic acid (VC) was as a positive control. In addition, the inhibit ability to the Peroxide value (POV) of sunflower seed oil of Terminalia chebula Retz. fruit and Butyl hydroxyl anisole(BHA),2,6-Di-tert-butyl-p-cresol(BHT), Tert-Butyl hydroquinone (TBHQ) were compared. The POV、saponification value、 acid value and free radicals scavenging capability of Terminalia chebula Retz. fruit and gallic acid、ascorbic acid、a-tocopherol complex antioxidant were evaluated. Using gas chromatography-mass spectrometer (GC-MS) method for determining oil content of all kinds of fatty acids in raw materials, according to the mathematical model for the preparation of nutrition-based blend oil; due to schaal experiment for evaluating antioxidant capacity of compound antioxidants. Results The extract yield, contents of total phenol and antioxidant activity of ethyl acetate fraction were significantly higher than other fractions(P<0.05). The ethyl acetate part was further fractionated into 8 fractions(Fragment 1-Fragment 8)by Toyoperal 40-C chromatography. The antioxidant activities of Fragment 8 and Fragment 2 were higher than those of VC and the yield of Fragment 2 is 3.33 times higher than those of Fragment 8. The antioxidant effect on sunflower seed oil of Terminalia chebula Retz. fruit extract is stronger than those of Fragment 8、BHA、BHT, but weaker than TBHQ. The antioxidant effect on sunflower seed oil of Fragment 8 was equivalent with BHA, but weaker than BHT、Terminalia chebula Retz. fruit extract and TBHQ; All the mixture had a better anti-lipid oxidation activities; The free radicals scavenging capability of gallic acid and ascorbic acid、gallic acid and a-tocopherol complex were stronger than single compound. However, the free radicals scavenging capability of Fragment 8 and ascorbic acid、 Fragment 8 and a-tocopherol、Terminalia chebula Retz. fruit extract and ascorbic acid complex were weaker than single compound, but all stronger than synthetic antioxidants. The optimal ratio to match the comparison of Peanut oil, sunflower oil and flaxseed oil is 68.68:19.23:12.08; Synergistic effects were observed in the order:0.003%GUE+0.017%Vc> 0.005% TCE+0.015%Vc>0.017%TCE+0.003%Ve>0.017%GUE+0.003%Ve by schaal oven method, and especially for combinations of 0.003%GUE and 0.017%Vc, which showed a greater synergistic effect than that of the each individual antioxidant and some synthetic antioxidants, such as BHA, and there isn’t significant difference between it and BHT. Conclusion The antioxidant activities of different parts from Terminalia chebula Retz. fruit were different, and antioxidant activities of ethyl acetate part was the best. The anti-lipid oxidation activities of Terminalia chebula Retz. fruit was better, so it could be used as the antioxidant. The Terminalia chebula Retz. fruit and gallic acid、ascorbic acid、α-tocopherol complex all had strong anti-lipid oxidation activities and free radicals scavenging capability. Compound antioxidants of G. uralensis Fisch. extract and T. chebula Retz. extract can offer effective alternative to synthetic antioxidants during storage of vegetable oils.
