Physalis alkekengi L. var. francheti (Mast.) Makino, which is also named red girl, is mainly distributed in Heilongjiang, Jilin, Hebei, Xinjiang and Shandong etc., which has ability to endure drought, waterlogging, hot and cold. Its persistent calyx is bitter and the fruit is sweet and slight acidic. Physalis alkekengi L. var. francheti (Mast.) Makino has the function of clearing away heat and toxic materials, relieving sore-throat and was proved to have obvious clinical effect. All the parts of Physalis alkekengi L var. francheti (Mast.) Makino could be used to be medcine. So it has great exploitation value.In order to ulteriorly exploit resource, the author conducted a series of study on the nutritional components of Physalis alkekengi L var. francheti (Mast.) Makino and its water-soluble polysaccharide, which achieved the following results.The results showed fruitage and persistent calyx of Physalis alpepengi L.var. francheti (Mast.) Makino was rich in various amino acids, trace mineral elements and others nutritional components. Its content was related with different in Physalis alpepengi L. var. francheti (Mast.) Makino. Mg, Se, Val. and Ile. were upper in fruitage. Ca, Fe, Lys. were upper in persistent calyx. Its These suggested that both of the fruitage and persistent of Physalis alpepengi L. var. francheti (Mast.) Makino have nutritive and pharmaceutical values.The technique to improve the conditions of extraction of polysaccharides from fruitage and persistent calyx of Physalis alpepengi L. var. francheti (Mast.) Makino was studied in this paper. The results showed that the optimum conditions of hot water extraction of water-soluble polysaccharides were as follows: the adding water ratio is 1:15, the temperature of extraction was 90℃, the duration of extraction was 6 hours, both the highest extraction ratio of polysaccharides were 2;783% and 2.920%. The optimal conditions of supersonic wave extraction of water-soluble polysaccharides were as follows: the adding water ratio is 1:10 (W:V).
