Maotai liquor and GuoTai liquor from Guizhou are representative ofMaotai-flavor liquor in China, which are famous at home and abroad. Microbes in thevinasse formed the particular community structure and has the rich bacterial diversitybased on local special geographical environment and climate conditions.In this reseach, vinasse before the fourth distillation from Maotai liquor andGuoTai liquor were chose as the tested samples, total DNA of bacterial were extractedfrom the samples. Then universal primers of16S rDNA were used to amplified targetfragments by polymerase chain reaction(PCR). Then these target genes were sent tothe company to be analyzed by high-throughput sequencing of16S rDNA V4area,thus bacterial diversity and community structure in two kinds of vinasse could bestudied. The main results are summarized as followings:It showes that bacterial diversity and species richness in two samples both arevery high and amount of sequencing could cover all the bacteria in the sample groupsthrough the rarefaction curve and species richnessn (Chao1) curve and Shannon-Wierner diversity curve.The vinasse bacterial communities in two samples display a highly diversifiedcomposition including11bacterial phyla: Acidobacteria, Actinobacteria,Bacteroidetes, Chlorobi, Chloroflexi,Crenarchaeo,Firmicutes, Gemmatimonadetes,Planctomycetes, Proteobacteria and Verrucomicrobia. The Proteobacteria andFirmicutes both are the predominant phyla in two vinasse, nevertheless, whichrespective shares of66.7%and19.1%in Maotai sample and which respective sharesof63.0%and22.1%in Guotai sample.The Pseudomonas, Lactobacillus, Stenotrophomonas, Phyllobacterium,Shewanella and Chryseobacterium are the main genus in Maotai vinasse and Guotaivinasse. The Pseudomonas and Lactobacillus both are the predominant phyla in twosamples, yet, which respective accounts for35.0%and18.3%in Maotai sample andwhich respective accounts for32.0%and21.3%in Guotai sample.
