Canarium album is kinds of Burevaceae and belongs to category of evergreen tree, which has the characteristic of high medicine value, multi-utilization and rich nutrition. It is the precious resource in our country, which can be used as food and medicine. In recent years, the industrialization of Canarium album is developing fast, and the cultivation is expanding quickly. However, nearly all the Canarium album leaves are discarded. Therefore, a lot of discarded Canarium album defoliation was produced, which result in huge waste of resources and environmental pollution. So, if we can strengthen the research and development of disused Canarium album leaves, we could change the waste into valuable. As a result, it will not only promote the development of Canarium album, but also bring enormous economic, social and ecological benefit. In this research, we determined the optimal parameters of extraction process of Canarium album leaves polyphenols by single factor experiment and uniform test. Then we explored the process condition of separation and purification of polyphenols by macroporous resin. In addition, I have study the antioxidant activity of polyphenols which extracted from Canarium album leaves through vitro experiment. In the end, we also carried on the research on the chemical composition of Canarium album leaves polyphenols by the method of characteristic color reaction, UV spectrum and high performance liquid chromatography. The main result of the study is as follows:(1) During the extraction experiment, the affected parameters such as ethanol strength, temperature, feed particle size, digestion time and solid to liquid ratio, were examined by mean of single factor test. Based on it, uniform experiment has been done. The optimal extraction conditions were: the ethanol solution was 61%, the solid to liquid ratio was 1:30, the Canarium album leaves powder was 80 mesh, the abstraction temperature was 20℃and the abstraction time was 0.7h.(2) Through the experiment of static and dynamic curve of static studying in the six kinds of macroporous resins, the result showed that HPD-722 resin had excellent absorption and desorption properties. The optimum conditions of dynamic absorption were: concentration of feed 20mg/mL, feeding rate 2mL/min, and eluted with 90% ethanol. Then we studied the theoretical about adsorption dynamics and thermodynamics of HPD-722 type macroporous resin.(3) The antioxidant properties of Canarium album leaves polyphenols were studied through six different systems: edible lard, superoxide anion (O2-·), free radicals·OH, ability of reverting, nitrite, H2O2 and compared with vitamin C and TBHQ. The results indicated: in the lard system, the anti-oxidation property of sample A is lower than vitamin C and the anti-oxidation property of sample B is stronger than sample A and vitamin C, but is lower than TBHQ. However, in the superoxide anion (O2-·) system, sample A, sample B and TBHQ cannot remove it under low concentration. Oppositely, it accelerates the generation of superoxide anion (O2-·). In the free radicals·OH system, the removal capability of sample A and sample B is weaker than vitamin C, but sample B's is stronger than sample A's and is equal to TBHQ's. In the ability of reverting system, sample A has some certain ability of reverting, but is weaker than sample B. At the same time, sample B'ability of reverting is stronger than TBHQ and is very close to vitamin C. In the nitrite system, the removal capability of sample A and sample B is inferior to vitamin C, but is stronger than TBHQ under the same concentration. In the H2O2 system, the removal capability of sample A is weaker than sample B which is equal to TBHQ's, but is weaker than vitamin C's.(4) Sample A and sample B all contain polyphenol detected by color reactions and UV spectrum. High performance liquid chromatography (HPLC) can determine polyphenol quantitatively. The result showed that sample B contained gallic acid, quercetin and amentoflavone, and the content were 14.690 mg / g, 9.844 mg / g, 1.613 mg / g.
