Tea powder currently has been widely used in various types of food,such as tea cakes,teacookies and tea noodles etc.This kind of tea food,not only can enhance the flavor of food,but also can improve the nutrition and health care efficacy of food.The test using ahigh energy nano lashing shredder to crushing tea which can reach nanometer degree,Discussioning the effect of nano Tieguanyin tea powder for the process of grinding time,ball-material ratio and rotating speed.Finding out the best process of nano Tieguanyin tea powder production,and which effect the physicochemical properties for this nano Tieguanyin tea powder.And to explore the application of nano powder in food in the Tieguanyin tea.1.Influence of grinding time on the nano Tieguanyin tea powderUnder the condition of the ball-material ratio at 1:1 and the rotational speed at 300 r/min,The best effect is grinding time at 6 hour、8 hour and 10 hour.The Tieguanyin tea powder particle size(D80)is 2.1μm.which grinding 6 hour later.While in the grinding time at the 7 hour,The particle size(D80)would break into the nanometer range,reached to 460nm,When the grinding time reaches 8 hour,Tieguanyin tea powder particle size(D80)would up to 380nm.The main biochemical constituents of nano Tieguanyin tea powder for the content(water extract,Thearubigin,theaflavin,theabrownin)which overall than the matched group;before the grinding time in 1~7 hour,The biochemical composition of Tieguanyin tea powder(water extract,Thearubigin,theaflavin,theabrownin),which is increased with increasing grinding time,While in grinding time 8~12 hour tends to level,but the overall content was slightly lower than that of matched group.2.Influence of ball-material ratio on the nano Tieguanyin tea powderUnder the condition of the grinding time at 7h and the rotational speed at 300 r/min,The best effect is the ball-material ratio at 1:1、1:2 and 1:4.Different ball to powder ratio Tieguanyin tea powder particle size(D80)are break to nanometer range.Among them,when ball material ratio of 1:1 to 4:1,Tieguanyin tea powder particle size reduced from 556nm to 380nm;but when the ball material ratio up to 5:1~10:1,the powder particle size(D80)as same as ball material ratio 10:1.When the ball material ratio reaches and exceeds 8:1,Tieguanyin tea powder accumulated value increased by 0.01%,which almost negligible.Compared with the matched group,with different ratio of ball to powder grinding Tieguanyin tea powder in addition to tea polyphenols,amino acids and caffeine content,other substances content were higher than control group.3.Influence of rotation speed on the nano Tieguanyin tea powderUnder the condition of the grinding time at 7h and the ball-material ratio at 1:1,The best effect is the rotational speed at 250 r/min、350 r/min and 450 r/min.when the rotational speed up to 150 r/min~450 r/min,the rotational speed increased can let grinding ball impact and abrasive the Tieguanyin,the specific performance of nano Tieguanyin tea powde particle size(D80)decreases.But when the speed over 450 r/min,which may make some ball on high speed airrotating in the tank bottom,and then make the abrasive the grinding ball for Tieguanyin tea powder reducing,eventually leading to decreased efficiency of grinding.4.processing technology and physical-chemical properties of the nano Tieguanyin tea powderExperimental results show that the Processing technology which is grinding time 8h、rotational speed 350 r/min and baii-material ratio 1:1 is best,which can reach 374nm.In the biochemical composition,the main biochemical constituents of Tieguanyin tea powder for the content(water extract,Thearubigin,theaflavin,theabrownin)which overall than the matched group;the content of tea polyphenols showed a slight downward trend,the average decrease of 1.33%.Nano Tieguanyin tea powder sensory quality was significantly lower than the control group in allsamples,with the soup color and taste evaluation score the highest total which is grinding time 8h、rotational speed 350 r/min and baii-material ratio 1:1 is the highest,sample which is grinding time 6h、rotational speed 350 r/min and baiimaterial ratio 2:1 in the second.Compared with the matched group,the brightness of nano Tieguanyin tea powder and green degree is gooder than raw Tieguanyin.the maximum of the color difference value L is grinding time 10h、rotational speed 450 r/min and baii-material ratio 1:1(70.354);grinding time 8h、rotational speed 350 r/min and baii-material ratio 1:1 show that the samples have the best color,the brightness best is grinding time 10、rotational speed 450 r/min and baii-material ratio 1:1Compared with the control,the nano Tieguanyin tea powder water holding capacity increases the least 3.13g/g;nano Tieguanyin tea powder for the adsorption of sodium cholate capacity up to increase 1.3moL/L;Tieguanyin tea powder oil holding capacity of at least 0.19 g/g,increased by 0.51 g/g.5.The application of nano Tieguanyin tea powder in the Yaoyaole puddingNano Tieguanyin tea powder as raw material,which is added to the traditional production process Yaoyaole pudding,and than it gets the best production process of yaoyaole pudding by orthogonal experiments:Added amount of 0.9%Nano Tie Guanyin tea powder、the freezing time is 20min、special YaoYaoLe powder and pectin ratio of 1:1.6.The application of nano Tieguanyin tea powder in the Guanqiao dried tofuNano Tieguanyin tea powder as the main raw material,which is added to the traditional production process Guanqiao dried tofu,to research the optimal production process and product formulation of Anxi specialty Guanqiao dried tofu.it gets the best production process of Guanqiao dried tofu is star anise 50g,add the amount of salt brine 250g,nano Tieguanyin tea powder dosage 2%.
