In this study,the phenotypic traits of the samara,the changes of fatty acid and antioxidant capacity were also researched.And the content of three bioactive components and their antioxidant capacity were determined.The results are shown as follows:First,the results revealed the length and width of wings were basically changeless in late April,and the development of seed coat continued from the end of April to the end of October.The development of seed kernels continued from the end of June to the end of October,the water content of the samara has been decreasing from the beginning,and it has decreased sharply in the middle and late October.The fresh seed size and 100-grain weight were basically changeless in September.The dry seed size and 100-grain weight have been increasing from July to the end of October.Second,the results showed that the kernel content in samara,oil content in seed kernel and total fatty acid content of samara reached the maximum at the end of October,the oil content in seed kernel and total fatty acid content decreased slightly in November.We detected 17 kinds of fatty acids during the samara ripening process.The content of saturated fatty acids remained stable after after gradual.The content of unsaturated fatty acids was stable after gradual increase.Different fatty acids had different trends and showed certain correlation each other during the accumulation process.Oil had a high total phenolic content in early development stage of samara,and there is no significant difference in antioxidant capacity.Third,the results indicated that contents of three bioactive components in seed coat was the highest.The contents of total phenolics,condensed tannins and total flavonoids in seed coat were 342.83 mg GAE/g,847.45 mg CE/g and 57.66 mg RE/g respectively.The contents of three bioactive components in seed kernel meal were the lowest.There were significant differences in different parts of sarama in the FRAP antioxidant capacity and the scavenging activities of DPPH free radical and ABTS~+·,and the sequence of antioxidant capacity from high to low was:seed coat,fruit wing,seed kernel meal.In addition,the antioxidative capacity was positively correlated with the contents of total phenolics and condensed tannins in different parts of sarama.
