ObjectiveThe aim of the thesis was to study the behavior of eating away from home,as well as the intake of away-from-home foods and energy and nutrients among Chinese adults.The second purpose was to analyze the energy and nutrients contribution of away-from-home foods.The third purpose was to explore the relationship between eating out and weight and blood pressure.MethodsThis research data were from " China nutrition and health Surveillance(2010-2012)" and Chinese KFC restaurant health fund "The follow-up study of urban residents eating out behavior and its effect on dietary intake,body weight,and blood pressure",the participants of study were adults of 18 and over.China nutrition and health Surveillance(2010-2012)extracted the survey sites by the method of multi-stage stratified cluster random sampling.The sample participants were selected using probability proportionate to size sampling.We used the data to analyze eating out behavior,foods intake,energy and nutrients intake,and the contribution to foods and nutrients intake.The follow-up investigation was conducted in Nanchang city and Changchun city.We calculated the relationship between body weight and blood pressure.Dataset cleaning and analysis used SAS 9.4 software.The chi-square was used to exame the significant of nominal data,and the relationship between out eating and weight and blood pressure using analysis of variance of repeated measurement.Results1.From 2010 to 2012,the prevalence of outside eating among Chinese adults was 45.69,and the male was higher than that of female.It was higher in the young age group high educated people,high household income,and urban areas.The rate of breakfast away from home is highest,and the rate of dinner away from home is lowest.2.The proportion of the away-from-home foods which from high to low was dessert,other livestock meat,poultry and products,flour and products,pork and products,beans and products,liquor and beverages,milk and products,aquatic products,eggs,rice and products,potato,vegetables,and fruits.The contribution of outside foods to the energy and key nutrients from high to low was selenium,carbohydrate,protein,retinol,phosphorus,dietary fiber,energy,zinc,potassium,iron,calcium,magnesium,vitamin A,fat,carotene,vitamin C,sodium,and vitamin E.3.The eating out behavior in adults had no effect on weight,BMI and diastolic blood pressure value change,while there was an effect on the increase of systolic blood pressure 4 years later.Conclusion1.There were differences in the rate of eating out in different groups and areas of adults in China in 2010-2012,and the male was higher than female;the urban is higher than that of rural areas.2.Eating out rate of breakfast was highest in Chinese adults,while the dinner was lowest.3.The adults tended to select dessert,livestock meat,flour,and potato,vegetables.When eating out,the intake of selenium,carbohydrate,protein were higher,while the proportion of carotene,vitamin C,and vitamin E was low.4.Eating out behavior showed an effect on the change of systolic blood pressure in adults with outside eating in 2010 or both 2010 and 2014.5.According to the results,it was necessary to carry out the nutrition education.It is important to study and establish the policy related to the outside eating.
