| The diet culture of Song and Yuan dynasties is an important part in the development history of ancient Chinese diet,among which sweet diet plays an important role.Based on the historical materialism,economic life and long-term theory,this paper expounds the development characteristics of the sweet diet and the general situation of the use of sugar in the diet in the Song and Yuan dynasties through the study of the sweet diet in the Song and Yuan dynasties.The study first clarified the sources of sugar in the sweet diet of song and Yuan dynasties,namely maltose,honey and sucrose,and analyzed and studied the production technology of these three kinds of sugar in song and Yuan dynasties.Maltose is the earliest artificial sugar used in ancient China,which belongs to grain sugar.Its processing technology is further refined on the basis of inheriting the previous generation,but it is related to the acquisition way and substitutability of the sugar itself,so it has not made a great breakthrough in general;Beekeeping technology and beekeeping industry in song and Yuan dynasties belonged to the stage of mature development,the technology had a great improvement,beekeeping industry also spread throughout the country;Sucrose in this period belongs to the rapid development stage,one is the universal production of sugar,two is the emergence of sugar icing,three is in the embryonic stage of sugar production,for the later commercial production and circulation of sugar lay a foundation.Secondly,this paper studies the general situation of the use of various kinds of sugar products from different levels of diet in song and Yuan dynasties.The use of sugar products in drinks is mainly honey and sucrose.Honey and sucrose are also used in all kinds of pastry sugar products;Meat products in a small amount of maltose use;Fruit and vegetable desserts mainly use sucrose and honey.The production of this part highlights the preservative effect of fruits and vegetables preserved with sugar and honey for long-term storage.The sugar in the porridge is mainly used as maltose and honey,especially maltose becomes the main holiday diet of cold Food Qingming Festival,which promotes the use of maltose in the porridge;Pharmaceutical and medicated food in the use of sugar products led by honey,maltose,sucrose and honey in medicine with pills as auxiliary materials greatly promote the use of its in medicine.From the production and use of various kinds of sugar products in this period,we can roughly judge that honey was the main sugar products used in social diet in Song and Yuan dynasties,and sucrose and maltose played an auxiliary role.What’s more,the paper analyzes the characteristics of sweet diet in song and Yuan dynasties.First,the diversity of sweet diet,first,the diversity of various kinds of food,second,the compatibility of various ethnic foods,and finally,the taste of literati diet and street snacks.Second,the commercialization of sweet diet was related to the great development of urban commodity economy in this period.Third,the refinement of sweet diet was promoted by the expansion of the literati class and their pursuit of refinement of diet.The last part is the cultural implication of sweet diet in the Song and Yuan dynasties.One is the description and praise of all kinds of sugar products in poems,Yuan songs and poetic drama,and the cultural meaning is given to them.The other is that all kinds of sweet diet have become an indispensable part of festivals,and are endowed with many cultural customs and customs related to festivals.Studies have shown that the sweetness of food during the song and yuan period in the development of Chinese ancient sweet food plays an important role,which forms a connecting link between the preceding and on the one hand,developed the first generation of all kinds of sugar food production and food processing technology,on the other hand,the great development of sweet food fashion promoted the social demand for the consumption of sugar,and promote the innovation of sugar production technology,For the future sucrose industry development has laid the material,technology and public consumption foundation.In short,the sweet diet in this period had important social significance,which transformed the practical function of diet to consumption and entertainment,which was of great significance in the history of Chinese diet. |
